This coffee mug cake comes complete with crumbly streusel topping in each little bite.

By now, I think all of my girl friends–and some of the guys too–are on Pinterest. We were talking about the site a few days ago, and one of my friends mentioned a “coffee cake in a mug” pin that taunted her every time she logged into her account.

Finally she wrote down the recipe with the intent of trying it at home, but then was horrified to learn one mug contained 720 calories and an entire day’s worth of saturated fat!

How can they fit so much fat into a single mug?!

So I came up with a healthier version for her.

You could quadruple the following recipe and it would still be healthier than eating one of the frankenmuffins from Pinterest.

I think my friend approves of this recipe.

She’s made it four times already and says I’m her new favorite person in the world.

Apparently my face is now pinned to her “Dream Wedding” Pinterest board, under the title “dream wedding caterer.”

Not sure how I feel about this…

To answer a question that a bunch of people have been asking:

Coffee cakes traditionally do not have actual coffee in the ingredients. They are so named because they’re seen as “a cake that goes well with coffee.”

If you want to add a sprinkle of instant coffee to this cake batter, feel free!

Coffee Mug Cake

A soft, homemade, easy and single serving coffee cake in a mug recipe.

Ingredients

  • 3 tbsp spelt, white, oat, or almond flour
  • 1/4 tsp baking powder
  • 1/16 tsp salt
  • pinch uncut stevia OR 1 tbsp sugar
  • 1 tbsp + 2 tsp water, or 1 egg or flax egg if using almond flour
  • 2 tsp oil or buttery spread – or applesauce
  • 1/4 tsp pure vanilla extract

For The Streusel

  • (If you like a lot of streusel feel free to double all ingredients below)
  • 1/8 tsp cinnamon
  • 1 1/4 tsp sucanat or brown sugar, or keto sweetener
  • 1/4 to 1/2 tsp oil or butter, or applesauce for low-fat
  • tiny pinch salt
  • 2 pecan or walnut halves

Instructions 

  • I prefer the oil or buttery spread, but that’s simply because I’m not a fan of fat-free baked goods. If using an oven, preheat to 330 F. Combine batter dry ingredients and mix well. Add wet and mix until just mixed. In a tiny bowl, combine all streusel ingredients. Fill a greased muffin tin 1/2 way with the batter (or use a ramekin or mug, if using the microwave). Sprinkle on two-thirds of the streusel, then spoon the remaining batter on top. Finally, sprinkle on the rest of the streusel. Cook 12-13 minutes in the oven, or around 1 minute in the microwave. Microwave times will vary, depending on microwave wattage.

    I’m going to have to try this ASAP. i used to make chocolaet ones in grad school all the time.

    I know a lot of people that have put a lot of effort into their weddings already- and are probably still years away from it. I guess if it makes them happy, but I’m so low key I’m trying to figure out a way of getting married in flip flops.

    I was just talking about the baked goods I missed since being vegan, wheat and refined sugar free. Coffee cake was one at the top of the list. Along with cinnamon buns and gingerbread (both the loaf and the men). Can’t wait to try this. YUM!

      I just made this with Bobs Red Mill AP GF flour, coconut sugar, and earth balance – it was amazing!!! You won’t feel like you’re missing anything!

          I LOVE THIS CAKE. It’s been my go to with all the diet restrictions I have right now. I make it GF, nut free, and refined sugar free. This works wonderfully with coconut sugar and Earth’s balance for the streusel, I use coconut oil for cake. I haven’t tried oat flour but found the results with Bob’s GF flour to be too spongy/rubbery, the best results I’ve gotten (GF) are with 2 tbsp brown rice flour and 2 1/2 tsp coconut flour (used less flour because coconut flour is a liquid hog!). This combination gave it a wonderful moist somewhat denser texture more like a pound cake. I also used carton coconut milk instead of water.

    Oh man my roommate is definitely obsessed with wedding stuff on pintrest. She nuts! I’ve seen a few of those crazy bride stories too. One girl went tanning so much she basically cooked herself from the inside out and died at the altar. SCARY.

      I’m pretty sure that’s not a true story lol. I suppose it is possible that she tanned waaayyyyyy too much &also happened to die at the altar,but the events would almost positively be unrelated. A tanning bed is not a microwave,it would not “cook” someone from the inside out..precisely the opposite. It would be from the outside in,meaning that the external effects would manifest long before anything internal happened..&since we are talking about a tanning bed,something that physically changes the color of ones skin at an expidited rate,the symptoms would surely be noticeable. If someone tanned long enough for it to cause intetnal complications,they wouldve greatly surpassed that bronzy glow that any bride to be would be looking for,several times over. Assuming she did it in several sessions like normal,she wouldve had to have burned &blistered and still continue with her sessions at which point idk what word would properly describe the condition that poor girls skin would be in… But my bet is no one would intentionally turn themselves into a crispy burn victim,especially if they’re walking down the aisle. HOWEVER, there is the possibility that she tried to get all her color in one go,say, the day before the nuptials,& stayed in the bed for a very lengthy amount of time,where the effects wouldnt be felt immediately..but I know theres no salon in the world that would allow that and you’d think someone would have enough common sense to know that laying naked in a machine thats basically the sun on massive steroids &only inches away from you&your naughty bits probably wont yield any desirable results…..but honestly,these days,i almost wouldnt be surprised if this story was actually true &that is what happened.
      Stupidity isnt grand,UNLESS were talking about these stupid easy &even more stupidly delicious mug cakes…especially this coffee cake one. Mm mm…just mmmmmmm. Simply delightful? Nope. Stupidly delightful 🙂

    Yum, I love coffee cake. I will probably try something similar soon. I have trouble following recipes, instead I use them as a guideline. lol
    I am in Wedding Mode right now because I am getting Married in September. I haven’t been planning all my life, In fact I didn’t seriously start planning until early this year… I am running out of time and doing my best to put together a fun wedding on a tight budget. I’m soooo glad I am not a bridezilla though. I watch that show ‘Bridezillas’ as a what NOT to do! lol, that and it’s also a guilty pleasure.

    Ok Katie, if I make it and love it, you’ll be pinned to a “dream wedding” board on MY Pinterest, too! LOL! :0) I freakin’ LOVE coffee cake but won’t make it anymore because I know how much guilt and regret I’d feel after consuming a piece from a normal recipie. Can’t wait to try this! And it’s about a zillion times better that all ingredients are ones I’ve got on-hand! :0) THANK YOU!

    I am finally old enough that the biggest marriage and baby blitz has passed. I would be lying if I didn’t say it was a bit hard because I wasn’t a part of the wave. However I have always known my wedding if I had one would be extremely easy and now, more and more I am thinking elope or justice of the peace.

    THEN spend the money on a fun vacation experience!

    (and yes, I have seen some crazy stipulations for the bridesmaids…kind of says a lot about the bride in my opinion).

    YUM!!! Could I have this for breakfast? I REALLY hate using the microwave just because it takes out the nutrition in anything and emits dangerous radiation. But I don’t wanna wait for the oven either 🙂
    Anyone obsessed with weddings? Well, I was *sort of* obsessed with the Royal Wedding. I know what you’re thinking- such a loser. Well, my cousin was obsessed with the Kim Kardashian Wedding. now THAT’s a real loser :p
    And guess who’s still married?
    If you said Kim you need therapy.
    So many people were surprised that they broke up so quick. Was I the only one who was surprised that it lasted a WHOLE 72 days?

    This looks absolutely AMAZING! I will be making this yummy recipe this weekend! I think my very non-vegan husband might like this as well! Thanks for another fantastic recipe!

    As for weddings- I agree. It should be special and perfect because of who you are marrying!! I married my husband in a courthouse in the presence of 8 people and a judge, in a 3-dollar thrift store dress. We had plans to have a “real” wedding, and even that one was very low-key. But in the end, we just didn’t feel like waiting that long just to make a spectacle of the whole thing. And I am definitely NOT saying that all weddings are just a big show- I love lovely weddings! Nothing wrong with that at all if you keep in mind the true reason for the whole thing! But for us- two young (I was 18, he was 22), spontaneous people, it just wasn’t for us 🙂 But here we are, nearly 8 years later with 2 kids!

    Btw, what is that you’ve got on top of the cake? Is it just melted coconut oil or icing? Thanks!

      You can make a really quick icing by just mixing powdered sugar or sugar-free powdered sugar with a few drops milk of choice. 🙂

      (I think you could just use water for a thinner icing… I used almond milk for the one in the photos.)
