A soft, homemade, easy and single serving coffee mug cake!
Coffee Cake In A Mug
This coffee mug cake comes complete with crumbly streusel topping in each little bite.
By now, I think all of my girl friends–and some of the guys too–are on Pinterest. We were talking about the site a few days ago, and one of my friends mentioned a “coffee cake in a mug” pin that taunted her every time she logged into her account.
Finally she wrote down the recipe with the intent of trying it at home, but then was horrified to learn one mug contained 720 calories and an entire day’s worth of saturated fat!

How can they fit so much fat into a single mug?!
So I came up with a healthier version for her.
You could quadruple the following recipe and it would still be healthier than eating one of the frankenmuffins from Pinterest.

I think my friend approves of this recipe.
She’s made it four times already and says I’m her new favorite person in the world.
Apparently my face is now pinned to her “Dream Wedding” Pinterest board, under the title “dream wedding caterer.”
Not sure how I feel about this…

To answer a question that a bunch of people have been asking:
Coffee cakes traditionally do not have actual coffee in the ingredients. They are so named because they’re seen as “a cake that goes well with coffee.”
If you want to add a sprinkle of instant coffee to this cake batter, feel free!
Or you can serve it the traditional way – with coffee, such as this Frappuccino Recipe or the youtube-favorite Whipped Coffee Recipe.

Coffee Mug Cake
Ingredients
- 3 tbsp spelt, white, oat, or almond flour
- 1/4 tsp baking powder
- 1/16 tsp salt
- pinch uncut stevia OR 1 tbsp sugar
- 1 tbsp + 2 tsp water, or 1 egg or flax egg if using almond flour
- 2 tsp oil or buttery spread – or applesauce
- 1/4 tsp pure vanilla extract
For The Streusel
- (If you like a lot of streusel feel free to double all ingredients below)
- 1/8 tsp cinnamon
- 1 1/4 tsp sucanat or brown sugar, or keto sweetener
- 1/4 to 1/2 tsp oil or butter, or applesauce for low-fat
- tiny pinch salt
- 2 pecan or walnut halves
Instructions
- I prefer the oil or buttery spread, but that’s simply because I’m not a fan of fat-free baked goods. If using an oven, preheat to 330 F. Combine batter dry ingredients and mix well. Add wet and mix until just mixed. In a tiny bowl, combine all streusel ingredients. Fill a greased muffin tin 1/2 way with the batter (or use a ramekin or mug, if using the microwave). Sprinkle on two-thirds of the streusel, then spoon the remaining batter on top. Finally, sprinkle on the rest of the streusel. Cook 12-13 minutes in the oven, or around 1 minute in the microwave. Microwave times will vary, depending on microwave wattage.View Nutrition Facts

More Healthy Mug Cake Recipes:

Just made this one (the white AP flour/oil/oven baked version). A definite winner! I followed recipe exactly, except I topped the tiny baked cake with a tsp of powdered sugar mixed a tsp of cream for an icing drizzle. Satisfied my sweet tooth without derailing my plan to cut down on the sugar and processed sweets. Need to see if it comes out as well in the microwave. Thanks!
I made mine in the microwave. Put it in for one minute in a mug and it turned out perfect!
This.is.awesome! I used coconut sugar in the streusel and coconut oil all the way around. It is by far the best “clean eating” dessert I’ve made so far. Now if I could only figure out how to alter the recipe to make a bunch at a time!
I have made this recipe more times than I can count now. It is a big hit with so many in my family including my kids. Some variations I’ve made…many times depending on what was left in the kitchen ha, ha! 1) I’ve done gluten free flour (works great too, all of the topping sinks to the bottom but that’s okay, still yummy) 2) I’ve done half white flour/ half whole wheat flour (it works very well) 3) I’ve replaced the vanilla with almond extract (yum!) 4) I’ve added food coloring for holidays 5) I didn’t have brown sugar so I used molasses and sugar separate (gave it a nice flavor to use actual molasses). Thank you for this awesome recipe!! 🙂
Just made this recipe, substituting bananas for oil and used oat flour. So delicious! Thank you for these tasty recipes, Katie!
I’m SO making this 🙂 🙂 Katie, is it wrong that you’re a best friend in my head? Are you vegan? Seeing these recipes makes me think being vegan might be easier than I thought 😀
Gluten free cookies. Instead of using any kind of expensive flour. Make cookies with gluten free whole oats pulverize half and then add the rest to the mix. Tried it yesterday with adding pulverized walnuts and 2 bananas. They were so good..
OH MY GOSH! I REALLY LOVE YOUR DESSERT RECIPES!! <3 I'm such a big dessert person and I'm always having this post-dessert-guilt… But after reading through your blog, I thought I found heaven!! Such yummy desserts+nutritional facts that gets rid of the dessert guilt. :") I'M GONNA DO THIS FOR MY BREAKFAST RIGHT NOW! 🙂 Keep up the amazing work! 🙂
Katie I just made this and had to make a second
One it was so good!!
I used your friends suggestion of 2 tbs of Almond flour
And 1 tbs of oat flour.( didn’t have spelt or rice).
Also I substituted xylitol for sugar in streusel topping.
Yummy!! Made it candida friendly too.
I found your site just the other day, and I am really happy that I did. I tried this recipe out today, with 1 tbsp coconut flour and two tbsp potato flour. It did make the consistency perhaps a little chewier (a.k.a more difficult to cut up) but it tasted delicious! I’m so happy to have such an easy and quick recipe for a low-cal dessert when I feel like eating something sweet. 🙂
I just made this for breakfast! A total win! A slight disappointment because I just moved in and had no brown sugar for the streusel, but will definitely make it again with it! Thanks!
Katie,
I have been following you forever and I make tons of your recipes 🙂 I have my family addicted to most of them 🙂 I just made the single mug serving of your coffee cake because I wanted something sweet and just happen to have all of those ingredients in my panty – just wanted to ask you one question and I already checked with my husband to make sure it’s ok…. Will you marry me?!?! 😉
Hahaha 🙂 Love this comment!
especially because she says she has all her ingredients in her panty…..mention of the unmentionables and then marriage???
My sister is getting married in 6 weeks, so all I’ve been hearing for months is wedding talk!
Is it bad that I am more excited to try this cake than to talk about the wedding anymore? 😉
You are amazing to keep coming up with such excellent recipes!! I have such a restricted diet and can hardly find recipes that work for me so I ‘m pleased lots of
yours do. I tried the coconut flour porridge recipe today and it was so tasty and creamy. Thanks so much for sharing with us!
Hi k. I may be losing my mind (or eyesight) but there’s no mention of coffee in the recipe?
Coffee cakes do not have coffee. Google it. It’s true! 🙂
I just made this for myself and my brother. It was great! I’m only 14, but I love your blog. Thanks for this recipe!
You aren’t ONLY 14, give yourself some credit 🙂 14 years has been a while and I am sure you’ve done a lot of learning and growing during that time as a person. When I was 14 I knew a lot more than people gave me credit for, glad you are trying cool things like baking! God bless!
Made this with brown rice flour instead of spelt and coconut palm sugar, this was amazing! Perfect light sweet treat in the evening. Thanks for the receipe!
