Coffee Cake In A Mug
This coffee mug cake comes complete with crumbly streusel topping in each little bite.
By now, I think all of my girl friends–and some of the guys too–are on Pinterest. We were talking about the site a few days ago, and one of my friends mentioned a “coffee cake in a mug” pin that taunted her every time she logged into her account.
Finally she wrote down the recipe with the intent of trying it at home, but then was horrified to learn one mug contained 720 calories and an entire day’s worth of saturated fat!

How can they fit so much fat into a single mug?!
So I came up with a healthier version for her.
You could quadruple the following recipe and it would still be healthier than eating one of the frankenmuffins from Pinterest.

I think my friend approves of this recipe.
She’s made it four times already and says I’m her new favorite person in the world.
Apparently my face is now pinned to her “Dream Wedding” Pinterest board, under the title “dream wedding caterer.”

To answer a question that a bunch of people have been asking:
Coffee cakes traditionally do not have actual coffee in the ingredients. They are so named because they’re seen as “a cake that goes well with coffee.”
If you want to add a sprinkle of instant coffee to this cake batter, feel free!
Or you can serve it the traditional way – with coffee, such as this Frappuccino Recipe or the youtube-favorite Whipped Coffee Recipe.

Coffee Mug Cake
Ingredients
- 3 tbsp spelt, white, oat, or almond flour
- 1/4 tsp baking powder
- 1/16 tsp salt
- pinch uncut stevia OR 1 tbsp sugar
- 1 tbsp + 2 tsp water, or 1 egg or flax egg if using almond flour
- 2 tsp oil or buttery spread – or applesauce
- 1/4 tsp pure vanilla extract
For The Streusel
- (If you like a lot of streusel feel free to double all ingredients below)
- 1/8 tsp cinnamon
- 1 1/4 tsp sucanat or brown sugar, or keto sweetener
- 1/4 to 1/2 tsp oil or butter, or applesauce for low-fat
- tiny pinch salt
- 2 pecan or walnut halves
Instructions
- I prefer the oil or buttery spread, but that’s simply because I’m not a fan of fat-free baked goods. If using an oven, preheat to 330 F. Combine batter dry ingredients and mix well. Add wet and mix until just mixed. In a tiny bowl, combine all streusel ingredients. Fill a greased muffin tin 1/2 way with the batter (or use a ramekin or mug, if using the microwave). Sprinkle on two-thirds of the streusel, then spoon the remaining batter on top. Finally, sprinkle on the rest of the streusel. Cook 12-13 minutes in the oven, or around 1 minute in the microwave. Microwave times will vary, depending on microwave wattage.View Nutrition Facts

I love coffee cake! Looks incredible. Wouldn’t mind making a GIGANTIC coffee cake that fits in a bowl rather than a mug, LOL!
I made this with banana flour….didn’t like it! 😀 I knew it was a risk because I’m not crazy about banana flour anyway. I’m needing to use it up tho! 😉 I will try this soon with another flour so that I can enjoy it!

Where do the pecan/walnut halves come into play? I see them listed on the ingredients but never specify what to do with them… Do they go into the cake itself or added to streussel(kinda like you would for a “crisp” or “crumble” topping)? Or garnished on top? It can go any way so I’m really not sure lol. Im planning to make them now,like very literally right now, so hopefully youll be able to respond soon! If you arent able to answer me before I make them,I’ll just guess&let you know how it turned out! Lol thanks for an incredible recipe! New to your blog but will def be sticking around. I tried this, doubled the recipe to make one for my husband as well, used almond flour and coconut oil, followed everything to the t, and it didn’t turn out at all. Tried one in the microwave and it was A liquify mess. Put it in for longer and there was still a thick layer of bubbling oil on the top and the bottom was burned. Tried the other one in the oven and I still can’t get it to thicken and turn into a cake. Should I add more flour??
Hi! Unfortunately a lot of recipes don’t work to just double them exactly. If you do want to double it though and find it is too liquidy, maybe try adding a little coconut flour if you have it? That soaks up liquid like a sponge!

This was so good, and so tiny and cute! I used molasses as my sweet and it was perfect! I’m going to make it again and bake it (I microwaved it) because that will make it even better, which would be crazy! I need to double it and eat way too much!

I made the almond flour version and found it to be very eggy. However, you could reuse this recipe as French toast in a mug. Thank you for all of your recipes. I’ve made several and really appreciate you!
Did you use a coffee mug from a dollhouse set for the photo? I followed the recipe using spelt flour and coconut oil, and it was less than an inch at the bottom of a regular sized mug. I would need to multiple the recipe times 5, at least, to get a mug cake.

I have made this more than I wanna admit, probably upwards of 20 times! I always use either banana, applesauce, or Greek yogurt instead of oil (bananas my fave) and double the streusel. I also add oats instead of nuts to mine and it’s so unbelievably good!
Love this! Have made it the keto friendly way multiple times. I would love if you had a larger batch recipe for this. I’m gonna just have to do the math to increase the batter by 12 lol
