This coffee mug cake comes complete with crumbly streusel topping in each little bite.

By now, I think all of my girl friends–and some of the guys too–are on Pinterest. We were talking about the site a few days ago, and one of my friends mentioned a “coffee cake in a mug” pin that taunted her every time she logged into her account.

Finally she wrote down the recipe with the intent of trying it at home, but then was horrified to learn one mug contained 720 calories and an entire day’s worth of saturated fat!

How can they fit so much fat into a single mug?!

So I came up with a healthier version for her.

You could quadruple the following recipe and it would still be healthier than eating one of the frankenmuffins from Pinterest.

I think my friend approves of this recipe.

She’s made it four times already and says I’m her new favorite person in the world.

Apparently my face is now pinned to her “Dream Wedding” Pinterest board, under the title “dream wedding caterer.”

Not sure how I feel about this…

To answer a question that a bunch of people have been asking:

Coffee cakes traditionally do not have actual coffee in the ingredients. They are so named because they’re seen as “a cake that goes well with coffee.”

If you want to add a sprinkle of instant coffee to this cake batter, feel free!

Coffee Mug Cake

A soft, homemade, easy and single serving coffee cake in a mug recipe.

Ingredients

  • 3 tbsp spelt, white, oat, or almond flour
  • 1/4 tsp baking powder
  • 1/16 tsp salt
  • pinch uncut stevia OR 1 tbsp sugar
  • 1 tbsp + 2 tsp water, or 1 egg or flax egg if using almond flour
  • 2 tsp oil or buttery spread – or applesauce
  • 1/4 tsp pure vanilla extract

For The Streusel

  • (If you like a lot of streusel feel free to double all ingredients below)
  • 1/8 tsp cinnamon
  • 1 1/4 tsp sucanat or brown sugar, or keto sweetener
  • 1/4 to 1/2 tsp oil or butter, or applesauce for low-fat
  • tiny pinch salt
  • 2 pecan or walnut halves

Instructions 

  • I prefer the oil or buttery spread, but that’s simply because I’m not a fan of fat-free baked goods. If using an oven, preheat to 330 F. Combine batter dry ingredients and mix well. Add wet and mix until just mixed. In a tiny bowl, combine all streusel ingredients. Fill a greased muffin tin 1/2 way with the batter (or use a ramekin or mug, if using the microwave). Sprinkle on two-thirds of the streusel, then spoon the remaining batter on top. Finally, sprinkle on the rest of the streusel. Cook 12-13 minutes in the oven, or around 1 minute in the microwave. Microwave times will vary, depending on microwave wattage.

    I made it with oil ad it was moist and delicious 🙂

    I wonder how yiu get yours with white topping? Is it the margine?

    Also, the directiona are a little confusing, do I put dry and then wet together and thw mix the stroussel, and pt the strussel on the bottom of the cup? 🙂

      Mix all dry for muffin (not streusel). In a separate bowl, mix all muffin wet. Combine.

      Then in another separate bowl mix ALL streusel. Put 1/2 the streusel in the middle of the muffin and the other half on top. 🙂

      We had Easy Baked Ovens… not sure if those were similar! My sister got one for Christmas one year. I think I got some weird science “edible potions” kit that year lol.

    Thank you so much for all the “single-serving recipes”! I love baking muffins but I can’t hold myself back and basically eat a whole batch in one sitting!! I just tried this coffee cake and because I don’t use spelt or white flour – and love to experiment – I made it with 1 Tbsp. Brownrice flour and 2 Tbsp. almond meal (and butter instead of oil) – yummy!!

    Just want to say that I appreciate that you include microwave directions. It seems like many vegans these days are under the impression that a microwave isn’t healthy when nothing could be further than the truth! Decades of research have proved their safety, and it’s the best method of cooking for preserving the most phytonutrients, macronutrients, and micronutrients. More than steaming! Sorry for my tirade. 🙂

      Microwaves actually change the structure of food by the friction caused by heating, rendering it unrecognizable by the body. The body then treats it like a toxin, not food. Food cooked in a microwave causes an immune response (a flood of white blood cells) to deal with the altered food which also causes hemoglobin deficits. (anemia can also be a result because of this).

      Any food heated higher than roughly 114 degrees causes nutrient, enzyme and vitamin loss, regardless of how it’s heated. If your food comes out steaming hot, it will have gone through some degree of nutrient loss.

    I just tried to make this delicious-looking treat. I followed the directions perfectly, but I just ended up with a pile of mushy dough-ishness. What could I have done wrong? :-/

      you obviously couldn’t have followed the directions perfectly if it came out like that! maybe you mis-measured something? that happens to me all the time! but i just made this one this morning, so i know its a good recipe :). ooh i know! what flour did you use?

        Andrea, can you please tell me more about the specific ingredients you used? It’s almost impossible to know what your mistake could’ve been unless you give more specifics, since I wasn’t there to see. Hopefully we can figure it out!

          Andrea, I also had some trouble with this. I had to bake it (in the oven) 6 minutes more than called for to get it to set. I used whole wheat flour, and melted butter as my “oil.” Everything else I used as called for. The picture makes it look nice and fluffy, like a cupcake. Mine was nice and dense, like the sour cream coffee cake my mom used to make, but it would have been gooey if I’d taken it out of the oven at the specified time. As it was, it fell. But that’s a problem I always have with baking powder goods. I must overbeat it or something.

            I realize this comment is like 8 months old now but I think I may have just made the same mistake. I used 2 tbsp of oil instead of tsp… they took longer to bake and were dense. Hope this helps future bakers 🙂

    Ok….so don’t joke around about about being “pinned to her “Dream Wedding” Pinterest board” Every night I get on Pinterest and I always end up back here at your website. ;D My husband jokes around and says why don’t you marry this girl already. lol

    I have made your One minute chocolate cake a few times now. It goes down a treat!! Made it for Mother’s day. Used separate bowls for mixing the ingredients for each person. Made a huge mess, but they turn out great each and ever time. I have used the apple sauce variation and used just straight sugar instead of the stevia. But will give that a go, one of these days. Does that make it less calories?

    I am so gonna have to try this coffee cake now!!!!

      Yes, sugar has I think 15 calories per teaspoon? Stevia has zero.

    Ah. I know of the evil – but so good – recipe that this is inspired by. I made it once. And while it was delicious… I’ve never been able to convince myself to make it again. I did however just make your recipe and Katie dear, you’re a food genius! I’ve not had a chance to try many of your recipes yet but I have made several of them and I’ve loved them all, but this is by far my favorite! I love cinnamon anything. (=

    I have a dream wedding board on Pinterest… but it has to be said, my dream wedding is small and simple. I don’t need a fancy dress or ridiculously decorated cake. I don’t want my wedding to be all about me. I want it to be about both my groom and I together as a couple and surrounded by our closest loved ones. So, my wedding board is rather small and consists of sweet, simple ideas of things that we could do to give our wedding that cozy, intimate feeling. And there are of course some dresses and veils included. I’ve known a couple Bridezillas in my time and I just don’t understand why they have to be so dramatic and make what should be a happy event stressful for all involved. I’d rather my wedding and all the days leading up to it be filled only with happy tears – not bickering, anger and tears of frustration!
