Coffee Cake In A Mug

This coffee mug cake comes complete with crumbly streusel topping in each little bite.

By now, I think all of my girl friends–and some of the guys too–are on Pinterest. We were talking about the site a few days ago, and one of my friends mentioned a “coffee cake in a mug” pin that taunted her every time she logged into her account.

Finally she wrote down the recipe with the intent of trying it at home, but then was horrified to learn one mug contained 720 calories and an entire day’s worth of saturated fat!

Also try the popular chocolate version: Vegan Chocolate Mug Cake

As seen on Buzzfeed - single serving coffee cake in a mug, can be made in the microwave, and the entire recipe is less than 150 calories. Full recipe link: https://lett-trim.today/2012/05/14/1-minute-coffee-cake-in-a-mug/

How can they fit so much fat into a single mug?!

So I came up with a healthier version for her.

You could quadruple the following recipe and it would still be healthier than eating one of the frankenmuffins from Pinterest.

I think my friend approves of this recipe.

She’s made it four times already and says I’m her new favorite person in the world.

Apparently my face is now pinned to her “Dream Wedding” Pinterest board, under the title “dream wedding caterer.”

Not sure how I feel about this…

Above, watch the step-by-step coffee mug cake recipe video

To answer a question that a bunch of people have been asking:

Coffee cakes traditionally do not have actual coffee in the ingredients. They are so named because they’re seen as “a cake that goes well with coffee.”

If you want to add a sprinkle of instant coffee to this cake batter, feel free!

Or you can serve it the traditional way – with coffee, such as this Frappuccino Recipe or the youtube-favorite Whipped Coffee Recipe.

Ingredients

  • 3 tbsp spelt, white, oat, or almond flour
  • 1/4 tsp baking powder
  • 1/16 tsp salt
  • pinch uncut stevia OR 1 tbsp sugar
  • 1 tbsp + 2 tsp water, or 1 egg or flax egg if using almond flour
  • 2 tsp oil or buttery spread – or applesauce
  • 1/4 tsp pure vanilla extract

For The Streusel

  • (If you like a lot of streusel feel free to double all ingredients below)
  • 1/8 tsp cinnamon
  • 1 1/4 tsp sucanat or brown sugar, or keto sweetener
  • 1/4 to 1/2 tsp oil or butter, or applesauce for low-fat
  • tiny pinch salt
  • 2 pecan or walnut halves

Instructions

  • I prefer the oil or buttery spread, but that’s simply because I’m not a fan of fat-free baked goods. If using an oven, preheat to 330 F. Combine batter dry ingredients and mix well. Add wet and mix until just mixed. In a tiny bowl, combine all streusel ingredients. Fill a greased muffin tin 1/2 way with the batter (or use a ramekin or mug, if using the microwave). Sprinkle on two-thirds of the streusel, then spoon the remaining batter on top. Finally, sprinkle on the rest of the streusel. Cook 12-13 minutes in the oven, or around 1 minute in the microwave. Microwave times will vary, depending on microwave wattage.

I wonder how almond flour would do. I think I will have to try! Thanks so much for putting recipes out there for people who loves sweets but aren’t eating sugar! I have got to lose the baby weight from having my daughter (8m ago) doctor’s orders but I just have a huge sweet tooth! I was so excited to find your sight!

    1. Chocolate-Covered Katie says:

Someone else said she used 2T brown rice flour and 1 T almond, and it worked well :).

  2. RP says:

Definitely want to make this this afternoon as my snack with coffee! How do you make the single ones in the oven? Are you using a special mug or just using one of the tins in a muffin tin?

    1. Chocolate-Covered Katie says:

Muffin tins with just one filled :).

  3. AJ says:

Hi CCK. I was wondering why you always use spelt flour? Is it nutritionally superior to all purpose or whole wheat? What’s the difference between spelt and all purpose? Thankssss

    1. Anonymous says:

Hey, I don’t want to speak for Katie, but I can answer some of your questions. Spelt flour is MUCH more nutritionally dense than any form of wheat flour and fairly high protein to boot, not to mention a higher fiber content too. It also contains much less gluten so it’s quite a bit easier to digest. Healthier all round really. 🙂 Hope that helps a bit.

You are so creative with the single serving treats…love it!

  5. casey says:

This looks good! Bet it doesn’t even need frosting/glaze. I just made your 1 min chocolate cake yesterday for my friend’s birthday. Perfect 1 person serving! Put a candle in it and everything. 🙂 made 1 for myself to sample ahead of time to make sure it was good (it was!!) I chose to use 1TB coconut sugar in place of your 2 tsp sugar. It was delicious and moist! I used coconut oil (not applesauce or alternative.) Made it in a 1 cup round glass pyrex dish in microwave for 1 min. Had little trouble getting it out of dish. I greased with coconut oil. Should I have used something else? I tried once taking it out when hot and once when completely cooled, both times stuck. Advice?

Also, I made your peanut butter chocolate banana frosting. Yum!

    1. Chocolate-Covered Katie says:

Hmmm… I don’t know why it would’ve stuck! I usually use coconut oil spray and wipe it around the dish, but oil shouldn’t be any different :-?.

  6. Olivia says:

Sorry another dense question form me hehe 🙂 but do coffee cakes ever have actual coffee in them?

    1. Jenny$1983 says:

I was just about to comment on that myself! Pretty sure there should be coffee in there somewhere… 😀

    2. kate says:

I think theyre supposed to go well with coffee! 🙂

      1. Chocolate-Covered Katie says:

        Kate’s got it right! 🙂

Although maybe *some* coffee cakes have coffee… But most of the ones I’ve ever seen don’t have it.

        1. Jenny$1983 says:

Ah, I’m sorry! I’ve only ever seen a coffee cake given that name with coffee flavouring, usually with walnuts involved somewhere too. My mistake 🙂

          1. Jenny$1983 says:

By the way, I’ve just made it and took my first bite (using spelt flour, 7 drops vanilla stevia, and coconut oil in the batter and streusel), and it is heavenly … I think this is definitely my new favourite Single Lady muffin, oh my word… 😀 Thank you Katie, as always!

Would love to see a non-wheat non-sugar version using almond flour and or coconut flour! Sounds delicious.

    1. Chocolate-Covered Katie says:

  8. Katie says:

Looks Fantastic! I have several friends who have gone vegan recently, so I can’t wait to make these treats for them!

In other news, has anyone ever told you that you look strikingly like Anna Kendrick?

    1. Casey says:

She TOTALLY does!! Both beautiful women 🙂

      1. Chocolate-Covered Katie says:

Aw you both just made my day! I think someone else on here said that once. I don’t see it, but she’s beautiful so of course I’ll take it!

  11. Alanna says:

This looks amazing! I’m hoping to make this tonight when I get home. I feel silly asking, but are you supposed to chop the pecans/walnuts for the streusel? It looks crumbly in the picture but I think all it says in the instructions is to combine the ingredients. Chopped or no, it sounds / looks delicious!

I must be odd as far as weddings go… maybe years back I would gotten caught up in the fun of it, but right now when I try to picture it I just get stressed thinking about what a logistical nightmare it will be to try and find a venue that is a least slightly convenient for some of the guests (both my boyfriend and I have friends and family all over the place), plus there’s the potentially awkward meeting and mixing of family that don’t all get along… ugh. I really think eloping or going to the JP and then having a casual party somewhere is the way to go (for me).

    1. Chocolate-Covered Katie says:

Oh lol yes! Where is my head? My site is acting up or I’d go change it right now. I’ll have to remember to fix it later!

      1. Alanna says:

Lol no worries… I’m guessing most people will figure that part out. I’m just really literal when reading recipes (told you I’m just good at following instructions, hehe). 😉 I just made this, and not surprisingly it’s awesome. I love the streusel and the contrast in texture to the cake!

      2. bob says:

I had the same question about chopping the streusel too! Consider this a friendly reminder to edit that part of the recipe, Chocolate-Covered Katie = )

  13. Sonja says:

I shared your recipes for single-serving peanut butter cookies, and ice cream! I have recently used both 🙂

  14. Saraquill says:

I’m morbidly curious- what were the ingredients in the 720 calorie cake? That is talent, putting so much in one cup.

When my sweetheart and I talk about our ideal wedding, we either come up with joke ideas, or else talk about what we want on our playlist.

    1. Chocolate-Covered Katie says:

I’m not sure, but I’ve heard that some of the chocolate ones can have up to 900!

  15. Amanda says:

    Two things:
    1. I love, love, love your recipes and I can’t wait to try the coffee cake!
    2. Destination wedding. Best decision I ever made. It’s about you, your sweetie, and your very closest friends and everyone gets a great vacation! The ladies at the salon said I was the calmest bride they had ever seen and it was the best day ever. I had no one to impress, and nothing to think about but spending the rest of my life with my favorite person ever : ).
