Coffee Cake In A Mug
This coffee mug cake comes complete with crumbly streusel topping in each little bite.
By now, I think all of my girl friends–and some of the guys too–are on Pinterest. We were talking about the site a few days ago, and one of my friends mentioned a “coffee cake in a mug” pin that taunted her every time she logged into her account.
Finally she wrote down the recipe with the intent of trying it at home, but then was horrified to learn one mug contained 720 calories and an entire day’s worth of saturated fat!

How can they fit so much fat into a single mug?!
So I came up with a healthier version for her.
You could quadruple the following recipe and it would still be healthier than eating one of the frankenmuffins from Pinterest.

I think my friend approves of this recipe.
She’s made it four times already and says I’m her new favorite person in the world.
Apparently my face is now pinned to her “Dream Wedding” Pinterest board, under the title “dream wedding caterer.”

To answer a question that a bunch of people have been asking:
Coffee cakes traditionally do not have actual coffee in the ingredients. They are so named because they’re seen as “a cake that goes well with coffee.”
If you want to add a sprinkle of instant coffee to this cake batter, feel free!
Or you can serve it the traditional way – with coffee, such as this Frappuccino Recipe or the youtube-favorite Whipped Coffee Recipe.

Coffee Mug Cake
Ingredients
- 3 tbsp spelt, white, oat, or almond flour
- 1/4 tsp baking powder
- 1/16 tsp salt
- pinch uncut stevia OR 1 tbsp sugar
- 1 tbsp + 2 tsp water, or 1 egg or flax egg if using almond flour
- 2 tsp oil or buttery spread – or applesauce
- 1/4 tsp pure vanilla extract
For The Streusel
- (If you like a lot of streusel feel free to double all ingredients below)
- 1/8 tsp cinnamon
- 1 1/4 tsp sucanat or brown sugar, or keto sweetener
- 1/4 to 1/2 tsp oil or butter, or applesauce for low-fat
- tiny pinch salt
- 2 pecan or walnut halves
Instructions
- I prefer the oil or buttery spread, but that’s simply because I’m not a fan of fat-free baked goods. If using an oven, preheat to 330 F. Combine batter dry ingredients and mix well. Add wet and mix until just mixed. In a tiny bowl, combine all streusel ingredients. Fill a greased muffin tin 1/2 way with the batter (or use a ramekin or mug, if using the microwave). Sprinkle on two-thirds of the streusel, then spoon the remaining batter on top. Finally, sprinkle on the rest of the streusel. Cook 12-13 minutes in the oven, or around 1 minute in the microwave. I will say I was a great bride. I let my bridemaids choose the dress and colour and let them do their hair and makeup however they liked. And one of my bridesmaids was 6 months pregnant on the day. She practically rolled down the isle. It was great because we were all relaxed and had a fun time.

If I could offer one bit of advice for those planning a wedding….wear comfortable shoes!!! I had a traditional long wedding gown but opted for ballerina type white satin slippers. You’re going to be walking around, talking/chatting, posing for pics, and dancing your day & night away. So be comfy!!! No one even noticed my shoes until I pointed them out! A friend of mine wore the same kind of shoe/slippers at her wedding & said she was so thankful that she did! 🙂

I know you spend a lot of time on your recipes and this site already, Katie, but I’m going to request additional information. I often want to make your single serving recipes, but I am NOT a single lady and if I’m making muffins, I need a dozen or two at a time. I have in the past just gone through and multiplied all the ingredients by 12, but it does get tedious and I need to find somewhere to save this information, etc. etc. I was hoping that instead of hundreds/thousands of us readers each doing all this math individually in our kitchens each time, perhaps you could post a link on recipes for a ‘panful’. I know I’d try more of the single serving recipes that way.

I actually don’t have recipes for bigger servings of things like the single-lady cupcakes, so there’s no recipe I can link to. But I AM working on some larger-serving muffin recipes :).

Oddly enough, it’s not always as easy as just increasing that much. For example, if you try to do that to my single-lady cookies you end up with a goopy mess! Things don’t always scale properly, for some strange reason.
Hmmm I haven’t tried that one, but I’ve made a few successfully, most recently the single lady cupcakes/muffins. I did make the coffee cake last night and it was great, but I couldn’t believe how long it took to make one cupcake….coulda made a whole batch in that time! Good thing the rest of the family was asleep 😉

made this yesterday amazing….just curious how you come up with the calorie info, do you use a website or just read the labels? secondly: on the vitamix giveaway if I already follow on facebook and recieve email can I still use that option to enter the giveaway? You have no idea how much I would appreciate the vitamix !!!!!
Now that people want full info (as opposed to just calories), I usually use spark recipe calculator, which is free.

I must apoligize because I kinda went crazy the last couple days…and have lost all ability to follow directions so I am so sorry for my screw ups with the vitamix entries…
Also, there were a couple recipes that I went on sparkrecipe and re-entered and got different results…I’m assuming it probably has something to do with my ingredients as opposed to yours (such as strawberries vs cherries, or medium banana vs grams, etc) thanks for always responding with such speed.
I just made this but paleo’fied it. By using 1/2T coconut flour, 2T almond meal. And more fiber stevia. It was so so sooooo good! I actually made a second one too and added ground ginger, nutmeg and some shredded zucchini. Mmmm. It’s more of a mix between a blonde brownie and baked oatmeal. But amazing non the less. Thanks for the guidelines and all your other paleo approved recipes.
I was at the market yesterday so I bought spelt flour JUST for this. I forgot to also get the nuts, but I think it’s fine without them, and I made it in the oven. I’m eating it now – soooo good! (But next time I’m adding walnuts or pecans for sure!)
This looks great. I am always looking for a fast breakfast and I’m glad I know not to be disappointed if it comes out flat.
I can’t believe people ask someone not to break a bone. How can you prevent that? We called my wedding “The Handicapped Parade” because my sister (maid of honor) was on crutches because of ankle surgery. She asked me before she had the surgery and I told her that her being pain-free was more important to me than having crutches in pictures. Our best man had a cane because his MS had gotten so bad he was not able to walk outside unassisted and another bridesmaid was on crutches because she was hit by a car while crossing the street 2 weeks before the wedding. We were just happy to have them all there.
