It’s like apple pie for breakfast!

I’ve really been getting into quinoa lately – it’s a great source of protein, is super easy to cook, and you can make it sweet or savory depending on your mood. I like to make up a big batch of quinoa all at once and then portion it out and add different ingredients to each individual serving.

These apple quinoa bowls really do taste like you are eating apple pie in a bowl! If you have apple pie spice on hand, definitely use it here – the combination of cinnamon, cloves, allspice, and nutmeg really does wonders in this recipe. If apple pie spice is scarce, however, plain cinnamon will also do in a pinch.

And if you happen to have any coconut milk or coconut butter lying around, I highly recommend adding a little to your breakfast apple pie.

Apple Pie Quinoa Breakfast Bowls

These sweet cinnamon apple quinoa breakfast bowls are a delicious and healthy morning meal.

Ingredients

  • 1/2 cup uncooked quinoa
  • 1/4 tsp salt
  • 1 2/3 cup water or apple juice
  • 1/4 tsp pure vanilla extract
  • 1 large apple, peeled and diced
  • 1/2 tsp cinnamon or apple pie spice
  • 1/3 cup raisins, optional
  • 3 tbsp coconut butter, optional
  • milk of choice, sweetener, and optional nuts

Instructions 

  • In a small pot, bring the water or juice to a boil. As soon as it’s boiling, lower to a simmer. Add the quinoa, apple, salt, and optional raisins, and cover. Leave covered on simmer for 40 minutes without ever lifting the lid. Then—still never lifting the lid—turn off the heat but let the quinoa sit covered an additional 20 minutes. After this time, it should be nice and fluffy! (If still too thin, bring back to a boil and stir until fluffy.) Stir in the cinnamon, vanilla extract, and optional nuts and coconut butter. Add a splash of milk of choice, and sweeten as desired. Cover and refrigerate leftovers.

    You show in the picture the apples spooned over the top, but the recipe says to cook them with the quinoa. You must have cooked the apples separately and spooned over the quinoa for the pictures.

      Haha yes. I try to not waste food, so in general I will save trials that aren’t yet perfected and use that for the photoshoot whenever I can. Because you’re playing around with the food so much, you can’t always eat the photographed version (in this case it turned out that I could). After I tried cooking the apple with the quinoa, I decided I much prefer that version (and it saves time as well!). So the recipe instructions are correct. You can do it both ways, but I’d recommend cooking the apple with the quinoa.

      You can reheat either in the microwave or on the stovetop. It can get thicker, so I like to stir in a little milk (coconutmilk, cashewmilk, etc.).

    I’ve shied away from quinoa for a while now as the recipes i’ve seen it in hasn’t been exciting. But this, this is one I definitely want to try as I love apple pie! I’m gonna give it a try next week.

    I just made this – for dinner! I used the apple juice, omitted the coconut butter and raisins, but did include the walnuts. I also peeked while it was cooking. I couldn’t help it. Hang up a wet paint sign, and I won’t touch the wall, but tell me not to peek while cooking or baking, and I’ll do it every time. It still turned out great!

    I’m confused on your nutrition info. Not sure how u got 195 since the quinoa alone is 180 per serving and the apple is around 60 per half a serving ?
