Soy-Free Love Potion

Remember middle school, when “going out” with someone meant his dad would drive him to meet you—and your mom—at the movies?

Today I was thinking back to middle school, the time when girls discover that whole “boys have cooties” thing is a lie. My mind wandered through first crushes to first kisses to first dates.

After my run, I extended the love-on-the-brain theme into breakfast: with a Lavender love potion parfait. The cream is my Healthy Whipped Cream blended with blueberries; lavender refers only to the color, not the taste.

Soy Free Lavender Cream

(Makes 1 1/2 cups: one Katie-sized serving!)

  • sweetener of choice
  • 1/16th tsp salt
  • handful blueberries
  • scant 2 1/2 tbsp water (20g)
  • 3 drops coconut extract, optional but recommended
  • 1/2 serving agar base (recipe linked below)

Instructions: First, make up the agar base. When it’s cooled, put 1/2 of it in a blender (or Magic Bullet) with all the other ingredients and blend away.  Whip very well. I like to put it in the freezer for a few minutes prior to eating, so it’s super-cold.

See original cream post for Nutrition Information.

For the parfait, I simply layered cooked oatmeal, cacao nibs, and the cream.

Question of the Day:
Do you remember your first kiss?

I am sorry to say, mine was not “Hollywood movie” romantic. Actually it was mortifying! I was in 7th grade, at a friend’s birthday party.

A bunch of us were sitting in her backyard, including my boyfriend at the time. Suddenly, everyone starts chanting, “Kiss kiss kiss!” Because so few of my friends were in relationships at such a young age, they decided that others’ relationships were their business; it was like Gossip Girl. Ugh. Anyway, the guy leans in, and I get all nervous. I scream, “Don’t kiss me, I have taco breath!” :-?Mortifying with a capital M. (But in the end, he kissed me anyway lol.)

ps: do you like making recipes soy free because of allergy prone people or bc of the soy/health debate?

    1. chocolate-covered katie says:

I don’t “like” making them soy-free, per se. But if one just happens to be soy-free, I’m excited to promote that fact, because I know a lot of other people DO avoid soy :).

      1. Sabine @ thefruitpursuit says:

        ah ok I see ! 🙂

  3. Little Bookworm says:

Katie, I really love your blog!! I discovered it some weeks ago and now I’m waiting every day for your great recipes!

Sadly it’s not that easy to get all ingredients here in Germany – for example coconut butter (never seen here) or other nut butters! 🙁 So I try to make my own – already made coconut-, cashew- and peanut butter. Yummy!

I also have a question: What is coconut / vanilla extract? I googled vanille extract – and it is described as 35%alcool flavoured with vanilla. Is this what you use?

    Love,
    Anna

    1. Chocolate-Covered Katie says:

      Aw thanks so much, Anna!
I asked my mom, and she said that when she lived in England, it was called “vanilla essence.” Maybe it just has a different name over in Europe?

      1. Anna says:

Ah yes, now I found an article about the different names in UK/US/Europe 🙂 Thank you so much!

I’ll ask in “my” wholefood shop” if they sell it – otherwise I have to search in a bigger supermarket. But before I’ll try with some Vanilla Powder I brought from a lovely shop in Paris – I think it’s not of the same intense – but it’s still Vanilla and i LOVE Vanilla 🙂

WAAAOWW!! that’s beautiful!!!. Can wait to try it. I also have some actual lavender and will throw some in there I think…

    1. Chocolate-Covered Katie says:

There’s actually a gelato place near my house that sells lavender gelato. It’s not vegan, so I never tried it. But I’ve always been curious!

      1. nadia says:

mm that sounds great. I love lavender and always put it in tea but I cant wait to try it in cooking. thanks for the idea!

  6. Devan says:

that looks amazing! and beautifully photographed !!
I remember my first kiss. Kindergarden.. I had a HUGE crush on a little red head and dared myself to go up and kiss him.. I did <3
he kissed me in grade 6 !! haha

    1. Chocolate-Covered Katie says:

Hahahaha you were a fast-moving girlie lol! I had a lot of boy friends in kindergarten… but I didn’t see them as romantic interests at all. Maybe that was because they played barbies with me and one even dressed up in a girls’ bathing suit when we went swimming? Poor guy, he was probably scarred for life :-?.

  7. Kate (What Kate is Cooking) says:

Oooh, that looks tasty! I love parfaits 🙂

My first kiss was when I was 15. It was actually kind of cute! Definitely not as bad as I would have expected my first to be 🙂

  8. Molly @ MollyRunsFresh says:

I can’t find agar flakes anywhere near me, but know that powdered gelatin is a *non-vegan* substitute for it. I am definitely trying this tonight after my date with the tread mill. Darn snow 🙁

And my first kiss was in pre-school. Tsk tsk.

  9. chelsey @ clean eating chelsey says:

Oh gosh – my first kiss was a spin the bottle experience. So embarassing.

    1. Chocolate-Covered Katie says:

Ack! Spin the bottle… somehow, we always managed to play that when there were way more girls than guys! So you ended up kissing the same guy all the time. Which, I guess was pretty cool from the guy’s point of view!

  10. A Tablespoon of Liz says:

This looks so good! And so pretty, the color is beautiful!

My first kiss was so terrible/ embarrassing I don’t think I’ll share it with anyone for a long time… haha.

    1. Chocolate-Covered Katie says:

Yeah, I’m kinda embarrassed that I shared mine lol!
