Until yesterday, I’d never tried baked oats.
Could that really be true?
Me?? With all of the Healthy Oatmeal Recipes?
Yes, somehow, it’s true. Baked oatmeal has been on my list for a long time, but that “to make” list is kinda lengthy. Thankfully, I finally got around to it… and now I am kicking myself (hard!) for not trying baked oatmeal sooner! I see many bowls (ramekins?) of it in my chocolate-covered future.

Single Serving Baked Pumpkin Oatmeal
Ingredients
- 1/2 cup rolled oats (50g)
- 1/4 tsp pure vanilla extract
- 1/2 tsp cinnamon, and optional 1/8 tsp pumpkin pie spice
- sweetener, such as 1 1/2 to 2 tbsp maple syrup or 1 to 1 1/2 packs stevia
- 1/4 cup canned pumpkin (applesauce or banana also work)
- 1/4 cup milk of choice, or nondairy creamer, or water (scale back by a tbsp if using liquid sweetener)
- 1/8 tsp salt
- Optional: 1 to 2 tbsp oil or favorite nut butter (if oil, scale the milk back by a tbsp)
- Optional: raisins, walnuts, brown sugar to sprinkle on top, etc.
Instructions
Single Serving Baked Pumpkin Oatmeal: Preheat oven to 380 degrees. Combine raw oats, spices, pumpkin, and milk. Pour into a greased 1-cup ramekin (or two 1/2-cup ramekins) or a mini-loaf pan. Cook for 20 minutes or more, until it gets firm. Finally, set your oven to “high broil” for 3 more minutes, or until it reaches desired crispy-ness (or simply just bake longer, but broiling gives it a nice crust). You can even make this the night before. Edit: some readers told me that they like to make multiple servings at once and freeze leftovers for an instant breakfast! A few readers have had success making this in the microwave, but I haven’t tried.

So, Pumpkin Boatmeal?
It was like biting into a warm pumpkin-oatmeal cookie. Highly, highly recommended! I thought I’d miss my creamy oats, but surprisingly I didn’t miss them one bit groat. I should’ve known: oatmeal in any form is pretty much guaranteed to be a hit with me.















In my first comment, I should have said, “do you think cooking a boatmeal in a microwave would work?” instead.
Any way you could microwave this? Help a college girl out! 😉

Holy Cow that was yummy!! I thought it was going to me firm and crisp, but it was soft and warm and poridge like, except for the crunchy top. Like a breakfast creme brulee, only better. So good!

second morning, same boatmeal. I can’t convince myself this isn’t a rich decedant dessert.
I subbed 1 T of maple syrup for chocolate chips. I swear this is dessert. I feel like I should have to split something this rich… can’t believe I get to eat it all myself 🙂 The broiler is genious of you! I add a tiny bit of brown sugar and let it carmalize. So good! You’ve out-done yourself!

I made this yesterday and it was delicious! I love oatmeal in any form, but it’s been a while since I baked it (because I’m lazy!). Well worth it, especially the brown sugar on top – gave it a nice crust that pushed it over the edge of yummyness! Thanks for a great and simple recipe that reminded me how awesome boatmeal is 🙂
So this has become a daily breakfast for me! I will say that the one thing I like best (that I never thought of doing before) is that it’s a nice single serving. I had always baked my oatmeal in large batches and to me, the best time to eat it is right outta the oven… so this is perfect! Thanks again 🙂

Though I’m not a vegan, I am a devout chocolate and dessert lover and I’m 3.5 months from my wedding and trying to shed a few extra pounds by working out extra hard – and cutting calories. I love your recipes because they keep you FULL of good things like fiber and protein AND are tasty and satisfy all dessert cravings! I’ve already tried three of your recipes and I’m looking forward to trying this tomorrow morning! Question though – when you say you can freeze these – do you mean bake them first then microwave them when you’re ready to eat? Or freeze pre-baked? Thanks for the help! I bake them up the night before and then put them in the fridge for the next morning, but I know a lot of other people have baked them first and then frozen the already-baked boatmeals to microwave later :).

I a just loving your recipes and your story makes them even better! You are very inspiring. I tried my first recipe yesterday, the cookie dough was ridiculous! Who would have thought you could do that with chick peas! I’m curious, I bought some organic canned butternut squash at the store this week with no idea what do with it. Have any ideas?

I made this this morning for the first time – it was soo good! 😀 Hehe~ I didn’t add any sweetener to the actual boatmeal, but I sprinkled raw sugar on top, which got all crunchy under the broiler… yummy~
