Banana Bread for One

I’d argue that brown and mushy bananas are actually even better than yellow (and much better than green!). Brownness signifies ripeness, so darker bananas yield sweeter fruit. Especially for those interested in eating less refined sugar, these fruits are perfect for smoothies, puddings, cakes, or even the raw fudge I’ve been eating non-stop. One can also peel and freeze brown bananas for a later date. And then there’s banana bread.

The creamy cereal truly does taste like eating banana bread in a bowl. And just as delicious as banana bread in a bowl is banana bread in a mug. Or in a muffin tin. Or in a ramekin…

Banana Bread for One

  • 3 tbsp spelt, white, or Bob’s gf flour (30g)
  • heaping 1/16th tsp salt
  • 1 heaping tbsp very-ripe banana (20g)
  • 1 tbsp oil, pre-melted buttery spread, applesauce, or combination
  • scant 1 tbsp milk of choice or water, or more if needed to moisten the batter
  • 1/4 tsp pure vanilla extract
  • 1/4 tsp baking powder, and tiny pinch baking soda for flavor
  • Sweetener (For normal tastebuds, 1 to 1 and 1/2 tbsp sugar. If you use liquid sweetener, cut back on other liquid. You can also use stevia. I omitted sugar, but most will probably want some.)

Preheat the oven to 325 degrees. Mix the dry, mix the wet, then add the two together. Pour into an oiled (or sprayed) muffin pan. Smooth top of batter. Cook for 10-14 ish minutes. (Or you can microwave it.)

    I am a big fan of bananas. I especially enjoy them in quick breads (like this fabulous-looking muffin of yours), frozen and then pureed for banana “soft serve,” and in banana-peanut butter sandwiches.

    I like bananas even though they were one of my most-hated foods as a kid. My mom makes awesome banana bread as a special treat but usually I eat them in smoothies!

    It’s kind of hard to type with one hand. Why am I typing with one hand? Well, because I am currently using the other hand to stuff my SECOND single lady banana bread into my mouth!!!! As soon as I finished the first one, I knew I had to make another. It was so easy, and the rest of my banana was just sitting there on the counter, waiting to be used.

    I hate bananas by themselves, but in things they are amazing! I make radical vegan peanut butter and banana cookies and banana brownies 🙂 Bananas are a wonder food! they are amazing for making substitutions!

        I don’t really use recipes hahha. BUT it is as simple as replacing the eggs in recipes with a banana (one large banana for 2 eggs) and then you can replace butter with oil (but I would decrease the amount by just a little). So for peanut butter cookies use a recipe with flour, rather than a flour-less recipe or it won’t work as well.

        Also to make the BEST brownies ever take your favorite recipe and replace the butter or oil with peanut butter and the eggs with banana and Voila! You have peanut butter banana brownies!

    I simply adore banana bread. My favorite recipe I have been making is the grain-free kind. It tastes so good made with peanut butter, but now I am wondering how it would taste with coconut butter??? mmmm…
