
I’d argue that brown and mushy bananas are actually even better than yellow (and much better than green!). Brownness signifies ripeness, so darker bananas yield sweeter fruit. Especially for those interested in eating less refined sugar, these fruits are perfect for smoothies, puddings, cakes, or even the raw fudge I’ve been eating non-stop. One can also peel and freeze brown bananas for a later date. And then there’s banana bread.

Banana Bread for One
- 3 tbsp spelt, white, or Bob’s gf flour (30g)
- heaping 1/16th tsp salt
- 1 heaping tbsp very-ripe banana (20g)
- 1 tbsp oil, pre-melted buttery spread, applesauce, or combination
- scant 1 tbsp milk of choice or water, or more if needed to moisten the batter
- 1/4 tsp pure vanilla extract
- 1/4 tsp baking powder, and tiny pinch baking soda for flavor
- Sweetener (For normal tastebuds, 1 to 1 and 1/2 tbsp sugar. If you use liquid sweetener, cut back on other liquid. You can also use stevia. I omitted sugar, but most will probably want some.)
Preheat the oven to 325 degrees. Mix the dry, mix the wet, then add the two together. Pour into an oiled (or sprayed) muffin pan. Smooth top of batter. Cook for 10-14 ish minutes. (Or you can microwave it.)















I just topped this with the some of the extra banana that i mashed up into a well, bananasauce almost. it was simple and sweet and very tasty

I used gluten free all purpose flour by Namaste and half of a small banana — I think I used too much banana because it made two banana breads, instead of just one. Whatever… more for me!
I added nutmeg, cinnamon, chocolate chips, and shedded coconut. They were perfect!
Mmmm I made this exactly like the recipe, except for the sugar and it was sooo tasty! My mom was making muffins out of a box for work and I really wanted one. Then I thought…I’ll make one of Katie’s and it will be good for me! Yum! It hit the spot.
That makes me SO happy! I remember feeling left out sometimes when my friends decided to make muffins at high school sleepovers. Wish I’d had a single-lady one then!

it’s really easy to make.
250g of blueberries
2T of honey (less or more depending on how sweet you want it)
a bit of lemon juice
but it together in a frying pan and cook on low heat for 3 minutes until they release all their juice

This sounds delicious! Is it possible to multiply this recipe and make a full banana bread loaf (say an 8×4 pan)? What changes would you have to make?
Hmmm… I’m sure you could, but I’ve never tried it and am really not good at the science of cooking! I just do things by experimenting. Maybe just increase the recipe by like 8? Sorry I can’t be more helpful! If you do figure out something, let me know :).
I will hopefully someday get a real banana bread recipe up!

How are your signle serving cupcakes around 110 calories if just the tablespoon of oil is 100 calories?
Oil is optional. As stated in the recipe, you can use applesauce.

I did make some changes to suit my taste buds:
3 T of Bob’s Red Mill 10 Grain Pancake and Waffle mix
1 T of mashed ripe banana
1+ T of water
3 packets of sweetener
1/2 teaspoon vanilla extract
1/2 T baking powder
I microwaved in a small bowl for about 1:10 minutes, and it was a success! 🙂 I liked the taste of the Bob’s mix; it gave a real hearty texture and flavor.
i was in the mood for a warm dessert tonight and made the banana bread for one, and added a few chocolate chips– sooo yummy. to make it even better though, I cut a hole in the middle and added some peanut butter which melted and with the melted chocolate chips, and banana omg! since it appears you share my love for peanut butter I figured I’d share!

Okay, so since the first recipe I tried out here (the deep dish cookie pie), which was a mere month or so ago, I’ve tried at least 10 different recipes. Without exaggerating. And for most of them, several times each. (The “and I loved them all” goes without saying.) And I’m not even home every day till like 7-8 pm! I’ve decided I’m tired of writing the recipes over and over again every single time I want to make them (which is very often) – I’m just going to make myself a CCK Cookbook with all the recipes and print it out. 😀 It’s going to be ah-maaaaazing.
(P.S. Eating the banana bread as I’m typing this and… mmmmmm.)

I just made several of these and ate one. It’s yummy. I added some chocolate chips, and used applesauce instead of oil. I didn’t add any additional sweeter, and they still taste sweet enough.
