Banana Bread for One

I’d argue that brown and mushy bananas are actually even better than yellow (and much better than green!). Brownness signifies ripeness, so darker bananas yield sweeter fruit. Especially for those interested in eating less refined sugar, these fruits are perfect for smoothies, puddings, cakes, or even the raw fudge I’ve been eating non-stop. One can also peel and freeze brown bananas for a later date. And then there’s banana bread.

The creamy cereal truly does taste like eating banana bread in a bowl. And just as delicious as banana bread in a bowl is banana bread in a mug. Or in a muffin tin. Or in a ramekin…

Banana Bread for One

  • 3 tbsp spelt, white, or Bob’s gf flour (30g)
  • heaping 1/16th tsp salt
  • 1 heaping tbsp very-ripe banana (20g)
  • 1 tbsp oil, pre-melted buttery spread, applesauce, or combination
  • scant 1 tbsp milk of choice or water, or more if needed to moisten the batter
  • 1/4 tsp pure vanilla extract
  • 1/4 tsp baking powder, and tiny pinch baking soda for flavor
  • Sweetener (For normal tastebuds, 1 to 1 and 1/2 tbsp sugar. If you use liquid sweetener, cut back on other liquid. You can also use stevia. I omitted sugar, but most will probably want some.)

Preheat the oven to 325 degrees. Mix the dry, mix the wet, then add the two together. Pour into an oiled (or sprayed) muffin pan. Smooth top of batter. Cook for 10-14 ish minutes. (Or you can microwave it.)

    Okay so first of all I have to tell you I am OBSESSED with your website/recipes. You’re definitely on my Top/Most Visited sites and I’ve made countless of your recipes- they’re all TOO GOOD!
    I just made this banana bread for one- I subbed Chocolate PB2 for the half of the flour, and Chocolate protein powder for the other half. This came out AMAZING. A chocolate peanut butter protein banana bread muffin for one. I was seriously in heaven!

    Just “repinned” this recipe in the hopes of winning a fabulous new food processor! I make “Banana Bread for One” all the time – I specifically leave a banana out of the counter until it becomes covered in brown spots, ready for baking!     I dusted the tops with cinnamon sugar rather than stir in sugar. I used Bog’s gf flour with a pinch of x-gum. I baked two separately in the microwave @55 seconds. They baked nicely. We devoured both moments ago. My son is gf, but I am so happy to find an eggless single treat for an occasional vegan visitor. I may add a scant Tbsp of raisins to sweeten up the next ones. Thank you.

    I have to tell you….U R THE BEST!!!! I always save all the recipes I like on my laptop or pin then but honestly I don´t even bother to look at them again. This time I am writing all of your recipes and making my Recipe Cookbook. I´ll place it next to the microwave this time.
    I´ve always wanted to find recipes for 1 or 2 servings other than cooking a whole cake ´cause then I feel guilty after I eat it all LOL!! Best of all…I can cook them on the microwave, that´s even better. Yay!!! I can´t wait to go to the market and buy some bananas to make this one. Hope I don´t go bananas!!!! lol

    Oh gosh Katie, this was gorgeous! Thank you! And it actually turns out better without oil and adding double milk, its holds it’s shape better (my friend and I did a test, hers had oil and mine didn’t).

    I absolutely LOVE the single serve recipes! My boyfriend and I aren’t big eaters, and if I made a dozen of something, half will end up going to waste!     Delicious! I doubled the recipe and baked them in a cupcake pan and ended up with 6.

    I also added Hemp Seeds for an extra burst of protein and Omegas. I also sprinkled cinnamon-sugar on top during the last few minutes, and they are just amazing.

    I’ve always had problems with my banana bread coming out too dense- these were light and fluffy, thank you!

    Ooh this was perfect, I was on the lookout for something I could put my leftover ‘nana in to eat along a cup of coffee with my healthy-sceptic boyfriend. I doubled the recipe, used 1 tablespoon of palm sugar, nearly a whole banana and (because I wanted GF) I used half GF all-purpose-flour and half sweet chestnut flour. Very happy with the result! Oh and usually I enjoy my bananas on their own, perfect snack 🙂 Thank you, Katie! Lots of hugs from The Netherlands

    I just made one of these for breakfast…didn’t use any sweetener (had a pretty ripe banana lying around!) It was PERFECT. I used 2 T almond meal and 1 T whole wheat flour and it wanted a little longer in the microwave but came out moist and delicious in the end. Thanks for this!!

    Ohhh my goodness! I tried this recipe but instead of the oil, I used extra mashed banana. And then for the liquid I though… “why not just use even MORE mashed banana!?” So I did. Even with the extra sweetness of the banana I added a packet of stevia… The result? Extra-super banana-y deliciousness! Definitely will keep this recipe for future notice… (near future… er… later today.)
