
I’d argue that brown and mushy bananas are actually even better than yellow (and much better than green!). Brownness signifies ripeness, so darker bananas yield sweeter fruit. Especially for those interested in eating less refined sugar, these fruits are perfect for smoothies, puddings, cakes, or even the raw fudge I’ve been eating non-stop. One can also peel and freeze brown bananas for a later date. And then there’s banana bread.

Banana Bread for One
- 3 tbsp spelt, white, or Bob’s gf flour (30g)
- heaping 1/16th tsp salt
- 1 heaping tbsp very-ripe banana (20g)
- 1 tbsp oil, pre-melted buttery spread, applesauce, or combination
- scant 1 tbsp milk of choice or water, or more if needed to moisten the batter
- 1/4 tsp pure vanilla extract
- 1/4 tsp baking powder, and tiny pinch baking soda for flavor
- Sweetener (For normal tastebuds, 1 to 1 and 1/2 tbsp sugar. If you use liquid sweetener, cut back on other liquid. You can also use stevia. I omitted sugar, but most will probably want some.)
Preheat the oven to 325 degrees. Mix the dry, mix the wet, then add the two together. Pour into an oiled (or sprayed) muffin pan. Smooth top of batter. Cook for 10-14 ish minutes. (Or you can microwave it.)















I’m sure this tastes great from the oven, but it was not a success in the microwave. I’ll try it again, though, this time truly baked.
I love this! I sub almond meal for the flour and an additional Tbsp of banana instead of the oil and it’s delicious! So fast and easy, and it worked in my microwave–twice now– yummm. Absolutely no sugar necessary because of the sweetness from the bananas!

This is honestly the best one i’ve found yet! I didnt added honey for the sweetner and didnt add any extra liquid and the consistency was great 🙂 Would taste great with some nuts
I love making this for breakfast when I have a little bit more time. I put it in a bowl in the microwave on 1000 watt for about 4 to 5 minutes.
Wow! I literally knocked a batch of these out (upped the amounts to make multiples) and they are gorgeous!

I am a bit of a sweet freak so I tweaked this a bit and added a 1/4 teaspoon of cinnamon and used 1 table spoon of each white and dark brown sugar and put some walnuts for crunch. They were delicious the way you had them but a bit more sugar-craving satisfying this way!

I always come to your site when I’m craving something sweet at night, usually chocolate, and a huge grinchy-grin comes to my face when I remember that you have a single-serving section. :] So I’m baking this recipe as I type, only I added some spices and pumpkin. I just made this but I mixed half of the batter with cocao powder and swirled it together and put some walnuts in too and OMG I almost wasn’t even going to bake it I was just going to eat it raw! Delicious girl! More people should look at this website. People are so used to traditional baking with vegetable oil and sugar and boxed mixes full of crap and think healthy baking means no taste but they are wrong wrong wrong! Keep it up girl 😉

I know this is a tad late, but I tried this and It was so delicious and easy! I made it in the microwave on high for 1 min and it was cooked perfectly! I used 1 tsp coconut oil and 1 tsp applesauce. I finished it off by cutting it in half and smearing a little vegan butter on the middles. It was to die for definitely my go to banana for recipe.
Tried this out this morning. It was sooo freaking delicious and filling!
I actually doubled the ingredients because it looked so little but oh man, i barely managed to finish it and i’m so stuffed and happy right now^^ added some cinnamon to the batter and on top of it (but i put it on everything sweet so :P)

This banana bread is sooo good! No one at home likes banana bread except for me, so this way I can have my single-serving banana bread without having to use the oven 😀
