Banana Pancakes for One


I’m really getting into this “single-serving” thing!

Yesterday, I was treated to breakfast, courtesy of my younger sister.

But to understand how yesterday’s breakfast came into fruition, I must take you back (in my super-cool time machine) to Christmas Day. Seeing how I have so many cupcake recipes on the blog, my sister decided to give me the following gift:

Too cute, right? Check out the expiration date. (She also gave me a copy of Vegan Cupcakes take over the World and a music CD. I already own the cookbook. But hey, who doesn’t like store credit at Barnes’n Noble?)

While I debated what cupcakes to choose, I asked little sister to make me something else: Vegan Banana Pancakes!

Banana Pancakes for One

  • 1/3 cup ww pastry, spelt, white, or Bob’s gf flour
  • 1/2 tsp baking powder
  • 1/2 tsp pure vanilla extract
  • 1/2 mashed banana, as ripe as possible
  • 1/4 cup milk of choice
  • dash salt

Mix the dry ingredients together. In a separate bowl, mash the banana and then add the other liquid ingredients. Stir the dry into the wet. Then make your vegan banana pancakes! (Makes 4-5)

Try topping these with syrup or even my recipe for {Healthy} Homemade Nutella.

    i absolutley love these! i eat about two of these with a handful of rasberries and some greek yogurt with brownsugar over them! im going to start5 making these even on shcool days because of how fast and tasty they are!!(:

    Katie these are AMAZING!!! They really are the best pancakes I’ve ever had. Most pancakes leave me feeling way too full and upset my stomach, but these are perfect. They are so mushy and sweet and thick I love them! I’ve been craving them every day when I wake up this whole week. And I can indulge without the guilt. So thanks for the great recipe!

    Oh wow! First off Katie, I’m a new and HUGE fan of your blog! Since happening upon your guest-post at skinnytaste.com a couple weeks ago I’ve been concocting many of your yummy creations and daydreaming about which recipe to make next! I’ve been sharing them with my sister who is a sugar-a-holic and is now trying to make healthy choices. I am not a vegan, (yet), but have been making more and more vegan recipes and slowly converting for the health benefits.
    For these above, I doubled the recipe. I was all out of regular flour, so I had to get creative and I blended some rolled oats to make oat flour (1/4 c.)and then used some Bob’s rice flour (1/4 c.)that was long forgotten in my pantry. (and expired about a year..eee) Despite that, they turned out so delicious! I topped them with your banana butter with added cocoa and warmed it in the microwave to make it more liquidy. Keep it up!

    Just made these. Used water to cut more calories and they still came out thick! I actually added more water- I like my pancakes on the thinner side. I also tried the banana butter- used pb2 and cinnamon. It was great! Thanks so much!

    Have you tried the banana-egg pancake recipe? I’ve seen it floating around Pinterest and it’s just 2 eggs and a banana mixed together and cooked like a pancake. I must confess that I’m skeptical…

    I am snowed in and had one overripe banana and less than one cup of milk, and I needed a recipe that would be satisfying and tasty. Cooking for one can be a real bummer and it took a long time to find this website and this great recipe. I doubted that it would really make pancakes, as everywhere else requires eggs, etc.; but I was desperate, so I crossed my fingers and tried it. Terrific! I had found a brand new bottle of maple syrup and I was drooling over the pancakes as I opened it. Why would anyone use a store-bought mix when it is so easy to create these little gems?

    Banana pancakes and maple syrup are the best duo ever, although I also enjoy blueberries. Now I can sit back and enjoy the snow until the men come to clear my driveway in a couple of days.

    i came home from the gym with the worst headache and a sore throat. wanted some comfort food. made these with a little cinnamon, undercooked and topped with a little agave. feelin better already 😉 thanks!
