I’m really getting into this “single-serving” thing!
Yesterday, I was treated to breakfast, courtesy of my younger sister.
But to understand how yesterday’s breakfast came into fruition, I must take you back (in my super-cool time machine) to Christmas Day. Seeing how I have so many cupcake recipes on the blog, my sister decided to give me the following gift:

Too cute, right? Check out the expiration date. (She also gave me a copy of Vegan Cupcakes take over the World and a music CD. I already own the cookbook. But hey, who doesn’t like store credit at Barnes’n Noble?)
While I debated what cupcakes to choose, I asked little sister to make me something else: Vegan Banana Pancakes!
Banana Pancakes for One
- 1/3 cup ww pastry, spelt, white, or Bob’s gf flour
- 1/2 tsp baking powder
- 1/2 tsp pure vanilla extract
- 1/2 mashed banana, as ripe as possible
- 1/4 cup milk of choice
- dash salt
Mix the dry ingredients together. In a separate bowl, mash the banana and then add the other liquid ingredients. Stir the dry into the wet. Then make your vegan banana pancakes! (Makes 4-5)
Try topping these with syrup or even my recipe for {Healthy} Homemade Nutella.
















Katie! My baby (and I) are obsessed with these! He’s a year old but he still doesn’t like to eat very much at times. My mom was over here yesterday and was amazed at how much he ate. Now she is going to make them for him sometimes too. I’ve been making one batch and splitting it with him but he likes them so much (again as do I) that today I made him his own batch. I use half oatmeal flakes and half flour and it’s awesome!
Oh and the funniest part is I don’t even like pancakes!!! But these are awesome. Growing up the only pancakes I would ever eat were my dad’s made from scratch blueberry pancakes.
Can I make these with oat flour (blended up oats) ?
Well I am clearly having these for tomorrow’s breakfast!

My favorite topping has to be bananas foster on my pancakes. By far the best thing given by god for topping ,or in my case just eating plain 😉
These look delicious! I have tried many pancake toppings… but nothing tops good old fashioned maple syrup! I loved chocolate chip pancakes drenched with the stuff. Then I checked the calorie count. Wow… but you have given me loads of new healthy ideas! Thanks!
what are the ammounts for one serving?
i’m really getting into recipies, thanks to your blog. thought i would share something i’ve worked a long time in perfecting, for health/carb control/weight loss efforts: i don’t have any great pic to share at this point. but here’s the info. these are to diet for imho. these make a very filling breakfast/meal for one culd easily share but one carries you through until lunch.
banana blueberry pancake single serving
cals: 295kcal | fat: 12.83g | carbs: 40.54g | prot: 16.71g
Includes: coconut oil, banana, oat bran, blueberries, whole foods vanilla whey powder, flax seed meal.
“one large pancake! delicious could share w/ someone it’s quite big and filling. naturally sweet! no syrup needed depending on how sweet your banana is. spray pan w/ pam cook on #4/10 ([preheated well) for best results/no burning. about 5 min per side.”
Foods in this Meal
1/3 tbsp coconut oil (1 tsp)
1/2 medium banana
1/4 cup oat bran (about 34 g)
1/4 serving frozen wyman’s blueberries or other no sugar added (15 g)
1/2 serving whole foods vanilla whey powder(11 g)
1 serving flax seed meal (13 g)
forgot one thing in the above recipes!!! i do use one egg white (45 g) which isn’t vegan obviously. but there are egg white substitutes that could be used and the recipe adapted. so sorry!
I have been making these pancakes since you first posted this recipe and I love them (especially with some blueberries thrown in)! Just recently I decided to try freezing some… I stuck a couple in the toaster this mornjng and just finished eating them, they freeze wonderfully!! I can’t wait to make a bunch more for when I’m low on time in the morning! Thank you!
