Banana Pancakes for One


I’m really getting into this “single-serving” thing!

Yesterday, I was treated to breakfast, courtesy of my younger sister.

But to understand how yesterday’s breakfast came into fruition, I must take you back (in my super-cool time machine) to Christmas Day. Seeing how I have so many cupcake recipes on the blog, my sister decided to give me the following gift:

Too cute, right? Check out the expiration date. (She also gave me a copy of Vegan Cupcakes take over the World and a music CD. I already own the cookbook. But hey, who doesn’t like store credit at Barnes’n Noble?)

While I debated what cupcakes to choose, I asked little sister to make me something else: Vegan Banana Pancakes!

Banana Pancakes for One

  • 1/3 cup ww pastry, spelt, white, or Bob’s gf flour
  • 1/2 tsp baking powder
  • 1/2 tsp pure vanilla extract
  • 1/2 mashed banana, as ripe as possible
  • 1/4 cup milk of choice
  • dash salt

Mix the dry ingredients together. In a separate bowl, mash the banana and then add the other liquid ingredients. Stir the dry into the wet. Then make your vegan banana pancakes! (Makes 4-5)

Try topping these with syrup or even my recipe for {Healthy} Homemade Nutella.

    That is too cute! I am infatuated with pancakes. I LOVE PANCAKES! My favorite toppings are banana and applesauce, and berry sauces!

    You really go my craving for banana going this morning, so I made some banana oatmeal. You’ll never guess what came in the mail partway through breakfast…. thank you so much for the babies! Really makes a girl’s day 🙂

    I love your single serving pancakes…I like pancakes, but a couple is all I need. Not a dozen…so I love the smaller serving size in your recipe! And that it’s vegan and can be GF. I have one recipe that’s made with banana, too for pancakes…I think warm bananas, syrup, and pancakes just GO together 🙂 Maybe w/ choc chips on top too!

    Oh my gosh – those look amazing (and your pancake picture is beautiful by the way 🙂 ). Pancakes = best breakfast ever. However, I don’t make them often because it’s a pain to try to cut down recipes to single servings. But thanks to you, I don’t have to! 🙂 Nut butters (and sometimes yogurt) are my favorite toppings!

      Haha usually I actually like bigger servings… then you can freeze the leftovers and only have to cook once ;). I’m all about the laziness!

    O, and random question: have you ever tried Bobo’s Oat Bars? I have become addicted to them. They have them at this coffee shop which is like a 7 or 8 minute walk from my school and I go down to get one when I have a chance. I am personally addicted to the chocolate and almond ones. I was just seeing if you are anyone else has tried them.

      I haven’t! I don’t think they sell them around here :(. I saw them a few times, years ago (in Boston, I think). Now I wish I’d bought one!

        I was so happy when they got them. Being I live in TN-and in the middle of nowhere-vegan, natural things are few and far in between. You can order them online I think, not sure. I should probably figure that out, being I am sure they are cheepper if you buy them from the source.

    I love banana pancakes! I like putting cinnamon in my batter, and slicing bananas on them while they are cooking. Then when I flip them, the banana slices get all carmelized! Mmmmm….
