Last year was clearly unlike any other we’ve ever experienced. But aside from thousands more people finding my posts on banana bread and chocolate chip cookies each week, the food trends of the year remained the same.

People still love mug cakes, peanut butter, vegan food, keto recipes, and pretty much anything chocolate!

I’ve made the vegan chocolate chip cookies, chocolate mug cake, and your overnight oats recipe is my favorite. Last night I baked your mug cake in two ramekins and filled and frosted it with greek yogurt and almondmilk whipped cream. Mini personal layer cake!! I am stoked to whip up those black bean brownies, as I have all of the ingredients. But why are the chocolate chips mandatory? I don’t like chunks in my brownies, weird I know.

I would add your Keto Pancakes, Chocolate Peanut Butter Oatmeal, and Vegan Hot Chocolate to the list. Those are the recipes of yours that I have been making most often lately. It may sound silly, but I would love for you to do an avocado toast recipe. I’ve actually never tried it because I’m not sure what to add (other than bread and avocado). Many of the recipes I’ve seen are also topped with eggs and I don’t care for eggs.

For the holiday season, I would enjoy seeing more eggnog and gingerbread flavored recipes. Gingerbread pancakes or oatmeal would be wonderful!

Gingerbread pancakes are a fantastic idea!

Your chocolate blender muffins are my very favorite. I’ve tried other healthy chocolate muffin recipes out there (and some not healthy ones) and they never match up!

I’ve been making an oat flour and flax seed brownie in the microwave with almond butter on top for breakfast, which is a variation of your mug brownie recipe. It’s so good.

I also second the hot chocolate.

My favorite ice cream shop back home (Whitey’s shout out!) has a sundae with hot fudge and a black cherry sauce with whole cherries. It’s so good. I have a can of black cherries and have been thinking there has to be a way to make healthy brownies with cherries inside. I suppose I could throw some frozen cherries in my regular brownies, but I haven’t found any in stock lately. Plus I keep thinking about the cherry juice.

I have a mug cookbook that has a recipe for mug chocolate cobbler. It is both cakey and fudgy. It’s really good, but I’d love a healthier version, mug or not.

Mug chocolate cobbler sounds so amazing…

    Hey Katie 🙂

I’ve been reading your blog for a while now, 3 years I guess 🙂 I really enjoy your recipes and ideas.

But lately something came to my mind… in every picture you post from yourself your hair looks absolutely stunning ! I was just wondering if you might give us a little insight into your hairroutine 🙂

    Greetings from Germany 🙂

    1. Chocolate Covered Katie says:

This pretty much made my day. Thank you 🙂
I have a curling machine that curls your hair for you so it only takes 10 minutes (it’s expensive, but I’ve had mine for a decade and it still works!) https://amzn.to/2XgOgxj
I use a moisturizing shampoo and conditioner and try not to use heat very often. It’s getting long because I haven’t been to a salon in over a year.

      1. Michelle says:

        Amazing, thank you 🙂 <3

  5. Mindy says:

    I’d love a recipe for a brookie!

Adding to my list of things to try 🙂

      Yes!

I would love to see a butterscotch or toffee vegan/gluten-free recipe. I know it wouldn’t be “the same” as using dairy butter, but those are some flavors my tastebuds miss! Vegan caramel is awesome, so maybe there’s hope?

    1. Chocolate Covered Katie says:

      Definitely will work on butterscotch!

  7. Irene Binyon says:

You missed one of my absolute favorite recipes in your Top 15. It is your Healthy Mac and Cheese with broccoli florets. I don’t even like broccoli, but I make this recipe every other week. Thank you for all your work!

    1. Chocolate Covered Katie says:

I can’t take credit for being the creator of that one, but I love it too!

  8. Shannon says:

Yeah I heard people say this year was a dumpster fire 🔥🔥🔥 I’m glad it’s over, but I don’t think we’re out of the woods yet. But I remain optimistic. I love your recipes I have your book I’ve suggested your book to everyone I always tell them to go to your website you’re awesome I love you Katie! Also I have a request could you make some vegan keto chaffle pretty please with vegan marshmallow whipped cream and a cherry on top 😁😁😁

    1. Chocolate Covered Katie says:

Will definitely put it on my list to try!

    2. JJ says:

I had to Google what a chaffle was. Interesting!

  9. Jordan says:

I’d love to see a keto chocolate frosting recipe that isn’t cream cheese based – perhaps a keto chocolate buttercream! Also, a keto loaf bread recipe (gingerbread loaf, chocolate loaf, pumpkin, etc!) is desperately needed. There is a short supply of them online and the couple I’ve tried are not good.
