Soft, fluffy, delicious blueberry pie pancakes.

This recipe yields SUPER ginormous pancakes!
Pleasantly Plump. One might use these words to describe the blueberries I recently purchased at Whole Foods. I’m always excited when summer rolls around and organic blueberries no longer cost an arm and a leg. And a pinky toe.

Today, however, I wasn’t feeling the muffin vibe.
And so I spent the entirety of my run dreaming up new ways to incorporate blueberries into breakfast. Finally, I settled upon blueberry pie pancakes. Just think about it for a second… blueberry pie in pancake form.
How could you possibly top that?!

Blueberry Pie Pancakes
Blueberry Pie Pancakes
Ingredients
- 1/2 cup blueberries
- 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
- 2Â tbsp rolled oats
- 1/2 tsp cinnamon
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp pure vanilla extract
- 1Â tbsp sugar or 1 packet stevia
- 1/3 cup milk of choice
- Unless you like the taste of fat-free pancakes, add 1 tbsp oil and reduce milk by that amount.
Instructions
Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or Cashew Cream. Or you could even boil some more blueberries (with a bit of sugar, if you wish), and smash them, to make a compote.

I just made these pancakes – soo good and soo thick!! I’m not vegan – just vegetarian – but if there are any non-vegans out there: these were absolutely delicious with a whipped cream frosting… well not really a frosting, I just blended together about 2/3 – 1 cup of whipping cream with 2 heaping tbsp of icing sugar, and a dash of vanilla extract. Tasted delicious on these pancakes!!
I love these already 😉 I’m making these this morning(-ish) for breakfast and I can NOT wait. Yummy~~ I think I might eat these before I brush my teeth. Plus I am hungry & thirsty…time for pancakes!

I tried these one morning a few months ago and cannot stop eating them. I love making them and fueling up before a work out because I know it’s healthy and tastes great! Sometimes I’m naughty and add chocolate chips or spread peanut butter on top.
So I know I just posted yesterday about how awesome these pancakes are but I just had to tell you…this morning I made them again for my kids (I was greedy yesterday and ate them all myself) and my 3 yr old snarfed his down without protest and my 9 month old literally sat in her chair and SCREAMED for more every time she ran out of her pancakes pieces. So they’re not only good for adults, they’re fantastic for kids as well!

My boyfriend and I made these this morning and used 1/2 banana mashed in place of any oil and sugar and they were sooooooo good and moist! Delish!
