Pleasantly Plump. One might use these words to describe the blueberries I recently purchased at Whole Foods. I’m always excited when summer rolls around and organic blueberries no longer cost an arm and a leg. And a pinky toe.

Today, however, I wasn’t feeling the muffin vibe.

And so I spent the entirety of my run dreaming up new ways to incorporate blueberries into breakfast. Finally, I settled upon blueberry pie pancakes. Just think about it for a second… blueberry pie in pancake form.

How could you possibly top that?!

Blueberry Pie Pancakes

Blueberry Pie Pancakes

Total Time: 10m
Yield: serves 1 person

Ingredients

  • 1/2 cup blueberries
  • 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
  • 2 tbsp rolled oats
  • 1/2 tsp cinnamon
  • 2/3 tsp baking powder
  • 1/8 tsp salt
  • 1/2 tsp pure vanilla extract
  • 1 tbsp sugar or 1 packet stevia
  • 1/3 cup milk of choice
  • Unless you like the taste of fat-free pancakes, add 1 tbsp oil and reduce milk by that amount.

Instructions

Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or Cashew Cream. Or you could even boil some more blueberries (with a bit of sugar, if you wish), and smash them, to make a compote.

    I made these this morning for the kids and they were really good! I thought I put a bit too much blueberries in them so next time Im going to cut in half the amount of berries, but they were still good! I loved how the blueberries were melted and gooey in the pancakes! The kids loved them too 😀

    I made these today with earth balance (I think this was the first time I was brave enough to add fat to my pancakes :o) and no sugar. They turned out like fluffy, GIANT, biscuits! A little heavy for me but very yummy 🙂

    These were yummy, but I wish the recipe said how many they make. I made a double batch, but it turned out to make just two 7-inch pancakes, which was enough for one person. Great recipe – I was out of almond milk and subbed water, and it turned out fine.

      Since it’s single-serving, just add up the nutritional info for the individual ingredients to get the total.

    oh. my. goodness. I used whole wheat flour (I was worried it would be too heavy) but goodness… it’s like eating a big fat cookie, (I almost wasn’t able to eat them all they’re so dense!) They are delicious. I didn’t change a thing… although I did use brown sugar for the sugar. Wow, I’m absolutely going to try more recipes on here. Thanks for a great easy recipe!

    I just made these for the first time and Y.U.M.! They’re so good! As I was eating I was lookin at the recipe again and I was like, Wha…? Oh No! I forgot Baking Powder LOL… They’re still YUMMERS! Just… dense. 🙂 I’ll definitely make them again, but with the BP, and I think I’ll do 1/2T coc oil next time too… Thanks Katie!
