Pleasantly Plump. One might use these words to describe the blueberries I recently purchased at Whole Foods. I’m always excited when summer rolls around and organic blueberries no longer cost an arm and a leg. And a pinky toe.

Today, however, I wasn’t feeling the muffin vibe.

And so I spent the entirety of my run dreaming up new ways to incorporate blueberries into breakfast. Finally, I settled upon blueberry pie pancakes. Just think about it for a second… blueberry pie in pancake form.

How could you possibly top that?!

Blueberry Pie Pancakes

Blueberry Pie Pancakes

Total Time: 10m
Yield: serves 1 person

Ingredients

  • 1/2 cup blueberries
  • 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
  • 2 tbsp rolled oats
  • 1/2 tsp cinnamon
  • 2/3 tsp baking powder
  • 1/8 tsp salt
  • 1/2 tsp pure vanilla extract
  • 1 tbsp sugar or 1 packet stevia
  • 1/3 cup milk of choice
  • Unless you like the taste of fat-free pancakes, add 1 tbsp oil and reduce milk by that amount.

Instructions

Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or Cashew Cream. Or you could even boil some more blueberries (with a bit of sugar, if you wish), and smash them, to make a compote.

    Mine turned out dense also, which is fine cause I like them that way. They tasted just like blueberry pie! I followed the recipe except I only used water instead of the nondairy milk and my blueberries were frozen. I wasn’t sure how many pancakes this was supposed to make. I made two, which were kind of thick. I had to finish them in the oven.

    I just made these! They were so good! Except I didn’t have any fresh blueberries so I used homemade blueberry jelly. Delicious! I also added some flax.

    I just tried these pancakes today, and they were ABSOLUTELY DELICIOUS. They exceeded my expectations. I didn’t have blueberries on hand so I used strawberries instead and they tasted so yummy and fresh. Can’t wait to try them with blueberries too!

    OMG!!! These are the BEST pancakes I’ve ever had!!! I made them with Oat Flour. Being involved with fitess, I’ve tried a TON of so called Protein pancakes, etc. But these are to DIE for!! Just scrambled up 3/4c of egg whites on the side, and my meal was complete!!! Thanks Katie 🙂

    PS: I topped mine with a TBS of coconut oil for my dose of healthy fat!!

      Mmmm I can’t take credit… I think even my shoe would taste good with coconut oil on top ;). That stuff’s the best… well, except for coconut butter which is somehow even better!

    I love blueberries, straight out of the package, in pancakes definitely! Or a blueberry sauce with a tad of lemon juice for sweet tart taste!
