Pleasantly Plump. One might use these words to describe the blueberries I recently purchased at Whole Foods. I’m always excited when summer rolls around and organic blueberries no longer cost an arm and a leg. And a pinky toe.

Today, however, I wasn’t feeling the muffin vibe.

And so I spent the entirety of my run dreaming up new ways to incorporate blueberries into breakfast. Finally, I settled upon blueberry pie pancakes. Just think about it for a second… blueberry pie in pancake form.

How could you possibly top that?!

Blueberry Pie Pancakes

Blueberry Pie Pancakes

Total Time: 10m
Yield: serves 1 person

Ingredients

  • 1/2 cup blueberries
  • 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
  • 2 tbsp rolled oats
  • 1/2 tsp cinnamon
  • 2/3 tsp baking powder
  • 1/8 tsp salt
  • 1/2 tsp pure vanilla extract
  • 1 tbsp sugar or 1 packet stevia
  • 1/3 cup milk of choice
  • Unless you like the taste of fat-free pancakes, add 1 tbsp oil and reduce milk by that amount.

Instructions

Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or Cashew Cream. Or you could even boil some more blueberries (with a bit of sugar, if you wish), and smash them, to make a compote.

    Before I ask my question, I just want to say that this website is absolutely AWESOME! I only found it last night whilst looking for vegan pancake recipes (oh cravings, how you torture me…), and I came across your strawberry shortcake pancakes. Let’s just say, my mouth jizzed at the picture alone.

    ANYWAY, I’m from the UK, and I was wondering about the conversions. We don’t measure ingredients by cups, so what would you say the equivalents are in grams/ml? I want my tastebuds’ first impressions of your pancakes to be indestructible. :3

      I usually do try to put in gram measurements. Unfortunately, I don’t have gram measurements for this recipe. But off the top of my head, I know that 1 tablespoon is 15 grams, 1 teaspoon is 5 grams, and 1/4 cup flour is around 40 grams.

    I’ve had this recipe bookmarked for soooome time. And now I’m kicking myself as blueberries are mega out of season. Does anything change in the recipe if I used frozen blueberries instead? Should I try thawing them overnight beforehand? I don’t often use frozen berries so just looking for a tip or two 🙂 Can’t wait to get my hands on these bad boys! My breakfast needs a little change up!!

    My friend gave me your website and I am so grateful! I have started my family on a GMO free diet which has omitted almost every pre-packaged breakfast item on planet earth. So with three kids and a not-so-much-for-mornings mama I have been baking after dinner for the mornings. My oldest child who belongs in the picky eater hall of fame and I have been sneaking your treats on him and he is delightfully unaware of how good they are for him 🙂 !!!! I was wondering if you have ever frozen your pancakes or muffins? Some days are so crazy it would be great to have a quick, frozen yummy in reach. Thank you so much!       Yes! These definitely freeze well. You can reheat either by thawing overnight, microwaving, or even warming up again in a warm oven 🙂

    Wow, I made these this morning. I substituted unsweetened applesauce for the oil and made a blueberry compote for the topping on one (because I ran out of blueberries) and used peanut butter and sugar free syrup on the other. An amazingly delicious breakfast for less than 500 calories and I am stuffed!!! Thanks for the recipe:) I will be using your website more!

    I made two recipes from you today, and this was the first (2nd was larabars) and they were both wonderful! Thank you so much for sharing them! I “paleofied” these bc I am eating a paleo diet. I used coconut milk (which I hate, but I couldn’t tell it was in there), no oats, and Angel’s Gluten free flour. They were so good and didn’t taste odd at all like a lot of gluten free baked goods do. I am not sure how much of that was bc of the great flour, but I bet they would have been great with any flour. My daughter asked me to make them for her birthday breakfast. 🙂
