Soft, fluffy, delicious blueberry pie pancakes.

This recipe yields SUPER ginormous pancakes!
Pleasantly Plump. One might use these words to describe the blueberries I recently purchased at Whole Foods. I’m always excited when summer rolls around and organic blueberries no longer cost an arm and a leg. And a pinky toe.

Today, however, I wasn’t feeling the muffin vibe.
And so I spent the entirety of my run dreaming up new ways to incorporate blueberries into breakfast. Finally, I settled upon blueberry pie pancakes. Just think about it for a second… blueberry pie in pancake form.
How could you possibly top that?!

Blueberry Pie Pancakes
Blueberry Pie Pancakes
Ingredients
- 1/2 cup blueberries
- 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
- 2 tbsp rolled oats
- 1/2 tsp cinnamon
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp pure vanilla extract
- 1 tbsp sugar or 1 packet stevia
- 1/3 cup milk of choice
- Unless you like the taste of fat-free pancakes, add 1 tbsp oil and reduce milk by that amount.
Instructions
Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or Cashew Cream. Or you could even boil some more blueberries (with a bit of sugar, if you wish), and smash them, to make a compote.

Wild blueberries are my favorite and I buy them frozen whenever I can find them. I love to mix them in Vanilla Greek yogurt and add them to my smoothies.
I just made these pancakes for the first time and used frozen wild blueberries and topped them with pure maple syrup and they were the BEST pancakes I have ever had! I also used Truvia for the sweetener and added some unflavored protein powder. My 4-year old loved that he got to lick the batter because there were no raw eggs in it! Thanks for this awesome recipe! I will be making these again (quite often I’m sure!) and can’t wait to try your other recipes!

I made these yesterday for brunch with my (very not vegan) dad and stepmom, and they both loved them! I tripled the recipe (and used the oil), and did a mixture of waffles and pancakes… I think I ended up with 3 waffles and 8 small (but fat!) pancakes, and topped with blueberry compote. They both thought the pancakes looked like cookies, lol. I think they worked better as pancakes since the batter was so thick and the blueberries were squished when I closed the waffle lid, but mess aside, they both tasted great. (Side note: the waffles took longer than normal to cook, and my poor waffle maker has dried purple juice all over it, haha… definitely should have cleaned it right away!)
What type of flour did you use? 🙂

I’m going to make these ASAP! Is the photo considered a “single” serving, or does this only make 1 pancake?
The photo is indeed one serving, but you’ll want to make the pancakes pretty small. (They’ll cook better that way, too.) I tripled the recipe and got 3 waffles and 8 little pancakes, so you can easily get three small pancakes from one batch. Hope that helps!
I have to admit, I was pretty skeptical of these at first….then after I mixed everything and tasted the batter, I was in heaven!!! These are awesome…and I LOVE how fat they get. Plus, they are still a little gooey in the inside, which is even better!!!

this is the first of your recipes that i have made. it was so quick, easy, and yummy! i just topped them with a bit of sugar free maple syrup for the perfect 4th of july breakfast. i am thinking of premixing the dry ingredients in sandwich bags to make them even more quickly before work.

Forgot to add sweetener once they were already cooking, but they were perfection! So delicious and surprisingly filling! maybe that was the protein from the peanut butter (my addiction) I had atop them.
