Soft, fluffy, delicious blueberry pie pancakes.

This recipe yields SUPER ginormous pancakes!
Pleasantly Plump. One might use these words to describe the blueberries I recently purchased at Whole Foods. I’m always excited when summer rolls around and organic blueberries no longer cost an arm and a leg. And a pinky toe.

Today, however, I wasn’t feeling the muffin vibe.
And so I spent the entirety of my run dreaming up new ways to incorporate blueberries into breakfast. Finally, I settled upon blueberry pie pancakes. Just think about it for a second… blueberry pie in pancake form.
How could you possibly top that?!

Blueberry Pie Pancakes
Blueberry Pie Pancakes
Ingredients
- 1/2 cup blueberries
- 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
- 2Â tbsp rolled oats
- 1/2 tsp cinnamon
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp pure vanilla extract
- 1Â tbsp sugar or 1 packet stevia
- 1/3 cup milk of choice
- Unless you like the taste of fat-free pancakes, add 1 tbsp oil and reduce milk by that amount.
Instructions
Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or Cashew Cream. Or you could even boil some more blueberries (with a bit of sugar, if you wish), and smash them, to make a compote.

These are absolutely amazing! I made them for my hubby as a breakfast surprise on Monday morning and he was shocked that there were no eggs or butter in them and thought they were way better than pancake mix from a box! I also made a second batch, subbing out the blueberries with chocolate chips and subbing out the cinnamon with cocoa powder, also delicious! I absolutely love Chocolate-Covered-Katie’s recipes!

When blueberries are in season, I buy tons and freeze them. They’re so good straight from the freezer or mixed in yogurt!
Can these be made with frozen blueberries? I never seem to pre plan my pancakes and I never keep fresh blueberries at home (because I can eat a pint in one sitting without thinking- haha)! Also, do you havea homemade syrup recipe that’s more liken to maple syrup??

I was working on a recipe awhile back for a stevia maple-type syrup. I finally abandoned it, though, because sometimes the recipe would work and sometimes it wouldn’t! Maybe someday when I find time, I’ll revisit it and experiment some more :).

I made these pancakes this morning and could not believe I was able to eat what I have been forbidding myself to enjoy for years!!!! These pancakes are OUTRAGEOUSLY DELICIOUS! I am loving your website! I am on a sugar free, gluten free, dairy free, corn free diet and I’m missing so many of the foods that I used to love! Your website has shown me that there are ways to make baked goods that fit with my lifestyle. 🙂 I tried these pancakes today and was pleasantly surprised that they turned out. I used flaxseed meal/flour, freeze-dried blueberries (because that was all I had on hand), stevia, rice milk, and the other ingredients as listed. While I was very worried that the pancakes wouldn’t stay together, they actually did (for the most part). Granted, I wouldn’t recommend making these with freeze-dried blueberries…it’s a little like making pancakes with captain crunch. They were more of an impediment than a help. 🙂 Worked out well enough. I’m sure if I keep experimenting with different flours I’ll figure out how to make mine look as lovely as yours. And perhaps I should use non-dried fruit next time! 🙂 So easy to make, and I love that this is a 1 person serving. Makes my life easier. I don’t have to deal with soo many pancakes to make before I can eat them. I’ll definitely keep looking at your recipes on here. You should make a cookbook. I’d buy it. 🙂
