Pleasantly Plump. One might use these words to describe the blueberries I recently purchased at Whole Foods. I’m always excited when summer rolls around and organic blueberries no longer cost an arm and a leg. And a pinky toe.

Today, however, I wasn’t feeling the muffin vibe.

And so I spent the entirety of my run dreaming up new ways to incorporate blueberries into breakfast. Finally, I settled upon blueberry pie pancakes. Just think about it for a second… blueberry pie in pancake form.

How could you possibly top that?!

Blueberry Pie Pancakes

Blueberry Pie Pancakes

Total Time: 10m
Yield: serves 1 person

Ingredients

  • 1/2 cup blueberries
  • 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
  • 2 tbsp rolled oats
  • 1/2 tsp cinnamon
  • 2/3 tsp baking powder
  • 1/8 tsp salt
  • 1/2 tsp pure vanilla extract
  • 1 tbsp sugar or 1 packet stevia
  • 1/3 cup milk of choice
  • Unless you like the taste of fat-free pancakes, add 1 tbsp oil and reduce milk by that amount.

Instructions

Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or Cashew Cream. Or you could even boil some more blueberries (with a bit of sugar, if you wish), and smash them, to make a compote.

    Do you think I can sub blueberries with cubed (dunno if this word exists ^^) peach? I would love to make the pancakes with blueberries because it sound soooo good, but I can’t get hand on some that don’t come from somewhere overseas and taste like bubbles of blueish water… 🙁

    Just picked up 10 pounds of blueberries from a farm…will be trying these in the morning. However, with four kids, I will have to probably multiply this recipe by 10! Can’t wait for the morning!

    honestly Katie, I could eat pancakes (specifically any of yours) EVERY SINGLE DAY! i absolutely love pancakes! My favorite are your apple pie pancakes, with the blueberry close behind, Oh and I love the banana pancakes, and the chocolate chip pancakes, and the SNICKERDOODLE!!! oh gosh i love the snicker doodle! my pancakes always need a full half cup of almond milk, sometimes i even increase it up to 3/4 cup because i’d rather have four or five thinnish than two fat. but i love them so much! i memorized the recipe. I’m going to need to figure out a way how to make them the night before once school starts so i can just reheat them for breakfast. .. . tips on doing that? should i freeze them?
