This recipe yields SUPER ginormous pancakes!
Pleasantly Plump. One might use these words to describe the blueberries I recently purchased at Whole Foods. I’m always excited when summer rolls around and organic blueberries no longer cost an arm and a leg. And a pinky toe.

Today, however, I wasn’t feeling the muffin vibe.
And so I spent the entirety of my run dreaming up new ways to incorporate blueberries into breakfast. Finally, I settled upon blueberry pie pancakes. Just think about it for a second… blueberry pie in pancake form.
How could you possibly top that?!

Blueberry Pie Pancakes
Blueberry Pie Pancakes
Ingredients
- 1/2 cup blueberries
- 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
- 2Â tbsp rolled oats
- 1/2 tsp cinnamon
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp pure vanilla extract
- 1Â tbsp sugar or 1 packet stevia
- 1/3 cup milk of choice
- Unless you like the taste of fat-free pancakes, add 1 tbsp oil and reduce milk by that amount.
Instructions
Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or Cashew Cream. Or you could even boil some more blueberries (with a bit of sugar, if you wish), and smash them, to make a compote.

Thanks for this recipe. I used a brown rice flour, goat milk and apple sauce instead of oil. My 3.5 yr old ate them up. She has lots of food allergies so to find something with no eggs, wheat, starches or butter that taste great is very tough. I made a second batch with almond and white rice flour with almond milk for my husband and I. We all loved them without any additional syrup, sugar or compote. Thank you!!!!
Just made these for breakfast WOW. My husband loved them and I was totally addicted. Best blueberry pancakes I’ve ever made! I went with a little more milk because I don’t like them too cakey.
I also used a mix of garbanzo and millet flour and a dash of flax meal rather than oil. Perfection! I omitted the sugar but covered them in syrup and earth balance spread. YUM.
I love you so much!! I’ve honestly switched my eating habits around 100%. I no longer look to the fattening, high calorie, high sugar foods. Your recipes are so great and healthy it’s crazy to even think they are good for you but i’m so glad they are!! It feels I haven’t even made changes to my life! Thank you so much! You inspire me!
Can I make this batter overnight and keep it in the fridge?
You can mix the dry ingredients the night before and then make the pancakes the next day. Or just make the entire pancake the night before and fridge.

Yum, made these for breakfast today for me and my man, added flax seeds and let the batter sit after the first ones came out a little runny, maybe because I used frozen blueberries and they released extra water while cooking. Served them with fresh whipped cream, and they were great!

I’m wondering (after looking a many different areas of your site) do you think I could substitute Trader Joes Dried Wild Blueberries for fresh (he hates the popping sensation) and coconut cream for the milk? I’m just guessing that the cream has more calories than milk, right? Thoughts?
