Soft, fluffy, delicious blueberry pie pancakes.

This recipe yields SUPER ginormous pancakes!
Pleasantly Plump. One might use these words to describe the blueberries I recently purchased at Whole Foods. I’m always excited when summer rolls around and organic blueberries no longer cost an arm and a leg. And a pinky toe.

Today, however, I wasn’t feeling the muffin vibe.
And so I spent the entirety of my run dreaming up new ways to incorporate blueberries into breakfast. Finally, I settled upon blueberry pie pancakes. Just think about it for a second… blueberry pie in pancake form.
How could you possibly top that?!

Blueberry Pie Pancakes
Blueberry Pie Pancakes
Ingredients
- 1/2 cup blueberries
- 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
- 2Â tbsp rolled oats
- 1/2 tsp cinnamon
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp pure vanilla extract
- 1Â tbsp sugar or 1 packet stevia
- 1/3 cup milk of choice
- Unless you like the taste of fat-free pancakes, add 1 tbsp oil and reduce milk by that amount.
Instructions
Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or Cashew Cream. Or you could even boil some more blueberries (with a bit of sugar, if you wish), and smash them, to make a compote.

This recipe is your BEST pancake recipe yet! I don’t add the oil and I add a tablespoon of ground flax seed. MMmmmmmmmmmm….so good! Even my picky boyfriend LOVES these pancakes. (He asks me to make them every weekend!!)
I don’t see calorie counts, which I would love to see!
I have a 6′ 112 pound kid at home recovering from a stay at the hospital and I am trying to get as many calories in him as possible.
Google search chocolate covered katie pineapple pancakes and you will find pancakes almost identical to these that have calorie counts.
Would wholemeal flour work just as well? And could the same recipes for cupcakes be applied for a cake?

I just made these pancakes and they were soooooo good! They didn’t hold together very well while i was flipping them, but thats probably because i am a terrible pancake flipper and i’m not patient. ; ) P.S. U R awesome!

After eyeing this recipe for a while now, I finally made them. And I have to say… THEY ARE THE BEST PANCAKE I’VE EVER HAD! EVER! not joking. Just tried these (like, I literally just put my plate in the sink) and can I just say…you have outdone yourself this time. The second I finished I was legitimately tempted to go back and make two more. Didn’t use oil, and can’t imagine them any other way. Awesome recipe!
OMG these were phenomenal! I am in love! Tried a different recipe last week that FLOPPED! So I was going to cry if these were not good! SOOOOOOOO happy right now! Topped them with a little powdered sugar and agave nectar! Even my non-paleo husband thought they were good! THANK YOU for sharing!
