Pleasantly Plump. One might use these words to describe the blueberries I recently purchased at Whole Foods. I’m always excited when summer rolls around and organic blueberries no longer cost an arm and a leg. And a pinky toe.

Today, however, I wasn’t feeling the muffin vibe.

And so I spent the entirety of my run dreaming up new ways to incorporate blueberries into breakfast. Finally, I settled upon blueberry pie pancakes. Just think about it for a second… blueberry pie in pancake form.

How could you possibly top that?!

Blueberry Pie Pancakes

Blueberry Pie Pancakes

Total Time: 10m
Yield: serves 1 person

Ingredients

  • 1/2 cup blueberries
  • 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
  • 2 tbsp rolled oats
  • 1/2 tsp cinnamon
  • 2/3 tsp baking powder
  • 1/8 tsp salt
  • 1/2 tsp pure vanilla extract
  • 1 tbsp sugar or 1 packet stevia
  • 1/3 cup milk of choice
  • Unless you like the taste of fat-free pancakes, add 1 tbsp oil and reduce milk by that amount.

Instructions

Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or Cashew Cream. Or you could even boil some more blueberries (with a bit of sugar, if you wish), and smash them, to make a compote.

    LOOOOOOOOOOOOOVE blueberries!! I absolutely adore them! I prefer eating them plain, but I also love them in muffins or pancakes. It is funny you are posting this recipe now, bc I made so many variations of your cookie dough pancakes, and one included blueberries instead of chocolate chips 😉 yummi! The only sad thing is that my supermarkets are currently out of blueberries 🙁

      Oh my gosh, that probably would’ve been even better… I think I like that cookie dough pancake recipe even more than this one. Haha you are much smarter than me. You should’ve told me! I wouldn’t have needed to experiment in making up a new recipe ;).

        I´m sorry, hopefully it didn´t take you as long as creating the brownie bites! I created so many variations of those pancakes, even one with peppermint extract which turned out awesome, and also one with lemon juice and poppy seeds. You really can use the cookie dough pancake recipe as the base for EVERYTHING!

    I always freeze blueberries whenever I see them on sale, and just drop them into my smoothies. Less ice = more blueberry flavor.

    I don’t really like cooked blueberries, but I like that these pancakes are fat. Our recipe we use is really good but the pancakes are thin, so I want to try this.

    I’m not sure it’s legal to be from Maine and NOT like blueberries. I love them. The good thing is they freeze well, so you could stock up during the summer when they are cheap and still use them for baking in winter. Blueberry goodness year round! I love them on breakfast quinoa. And in smoothie popcicles. And just by themselves!

    PS Have you ever had chocolate-covered blueberries? So good!

      This is going to sound crazy, but I actually don’t think I like chocolate blueberries! Probably because I don’t like dried blueberries. I was all excited to try the Endangered Species chocolate-blueberry bars, but I sadly didn’t like it at all!
