Soft, fluffy, delicious blueberry pie pancakes.

This recipe yields SUPER ginormous pancakes!
Pleasantly Plump. One might use these words to describe the blueberries I recently purchased at Whole Foods. I’m always excited when summer rolls around and organic blueberries no longer cost an arm and a leg. And a pinky toe.

Today, however, I wasn’t feeling the muffin vibe.
And so I spent the entirety of my run dreaming up new ways to incorporate blueberries into breakfast. Finally, I settled upon blueberry pie pancakes. Just think about it for a second… blueberry pie in pancake form.
How could you possibly top that?!

Blueberry Pie Pancakes
Blueberry Pie Pancakes
Ingredients
- 1/2 cup blueberries
- 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
- 2 tbsp rolled oats
- 1/2 tsp cinnamon
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp pure vanilla extract
- 1 tbsp sugar or 1 packet stevia
- 1/3 cup milk of choice
- Unless you like the taste of fat-free pancakes, add 1 tbsp oil and reduce milk by that amount.
Instructions
Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or Cashew Cream. Or you could even boil some more blueberries (with a bit of sugar, if you wish), and smash them, to make a compote.

I was in the mood for pancakes and since I adore blueberries, this looked perfect. Unfortunately I was short on the blueberries. I DID have some blackberries on hand, so I crushed them, a la your vanilla blackberry muffin recipe, and stirred them in. My pancakes didn’t come out as fat as yours (not sure what I did wrong) but OH. MY. GOODNESS. They were sooooo good. Probably even better than pie. YUM! Thanks, Katie!

Could I make these pancakes without the oats?
These are my FAVORITE pancakes ever! I make them literally every weekend! This weekend, I wanted pumpkin pancakes so, I just switched out the blueberries with around 1/3 cup pumpkin purée and added 1/2 tsp. of pumpkin spice…they were so delicious! Your recipes are my favorite!! Love the way everything taste and I know I’m eating healthy!
I used more oats instead of the flour and they cake out delicious! I love how they turned out! Your recipes are by far one of my absolute favorites ❤️
These look great. If I use frozen blueberries, do I need to reduce the liquid?
No just thaw first.
Had to guesstimate 2/3 teaspoon, only had 1/2 the amount of gf flour so mixed it with oat flour to make up the rest, used coconut sugar & cashew milk & used 1/2 the amount of blueberries and the rest chocolate chips…a bit of trouble flipping them at first but WOW! Rich and fluffy Served with frozen cool whip! Satisfied a week’s worth of sweet “teeth”!!! Thanks so much! Texas Treat Deeeelish!
Hey Katie,
I used to make these (and the strawberry ones) all the time. I’d even make a big batch, fry then up and freeze them. Now, not matter what I do, they glue themselves to the pan. I’ve tired raising/lowering the heat, you name it. I have a Green Pan and am using avocado oil. GLUED! Ugh. I am throwing 4 batches in the trash. The only thing I am doing different is the spelt I’m using is sprouted. I wouldn’t think that would do it. Any suggestions?
