Soft, fluffy, delicious blueberry pie pancakes.

This recipe yields SUPER ginormous pancakes!
Pleasantly Plump. One might use these words to describe the blueberries I recently purchased at Whole Foods. I’m always excited when summer rolls around and organic blueberries no longer cost an arm and a leg. And a pinky toe.
Sadly, the lower prices don’t last forever, and I therefore make it my mission to eat as many blueberries as humanly possible while they’re available! If you end up in a similar situation, with extra blueberries to use up, be sure to browse the recipes in the link below:

Today, however, I wasn’t feeling the muffin vibe.
And so I spent the entirety of my run dreaming up new ways to incorporate blueberries into breakfast. Finally, I settled upon blueberry pie pancakes. Just think about it for a second… blueberry pie in pancake form.
How could you possibly top that?!

Blueberry Pie Pancakes
Blueberry Pie Pancakes
Ingredients
- 1/2 cup blueberries
- 1/3 cup flour (ww pastry, white, spelt, or Bob’s gluten-free)
- 2 tbsp rolled oats
- 1/2 tsp cinnamon
- 2/3 tsp baking powder
- 1/8 tsp salt
- 1/2 tsp pure vanilla extract
- 1 tbsp sugar or 1 packet stevia
- 1/3 cup milk of choice
- Unless you like the taste of fat-free pancakes, add 1 tbsp oil and reduce milk by that amount.
Instructions
Combine dry ingredients in a bowl, then add wet. Mix, but don’t overmix. Cook on an oiled (or sprayed) pan, on low-medium, flipping each pancake once. Top with syrup, powdered sugar, or Cashew Cream. Or you could even boil some more blueberries (with a bit of sugar, if you wish), and smash them, to make a compote.

YUM! These sound just like the pancakes on made on Tuesday! They were delicious and I am totally loving the fresh blueberries that are coming out right now! YAY for fresh summer fruit!
Yum 🙂 I love blueberries, especially in pancakes(or top of) Those pancakes look crazy good! “Pleasantly Plump” Haha, that made me laugh 😀 I should make these for the kids tomorrow, I bet they’d love them.
I’ve been craving homemade pancakes for way too long. Maybe it’s about time I made some. Why not these?
Who doesn’t love blueberries? If they weren’t so expensive, I’d probably put them in my yogurt messes all the time. Unfortunately, they aren’t. But I buy blueberry jam quite often 🙂 .
I like blueberries, I love raspberries more though!
actually yesterday I found a can of blueberries in the cupboard so inspired by CCK, I put some blueberries in a container with a frozen banana, some walnuts and some oats and blended it until I had some healthy breakfast ice cream! I was meaning to put yogurt in but forgot and it tasted good without it anyway. I am down to my last two frozen bananas though – in australia bananas are REALLY expensive at the moment because most of the banana crops were wiped out during the Queensland floods & cyclone earlier this year. as soon as I heard that I put two bunches of bananas in my freezer and I’ve been rationing them out!
Ohmigosh that sounds awesome! I especially love blended oatmeal in the summer.
And I heard about your banana issues down there… I wish I could send you some here, where they’re really cheap! And maybe, in return, you could send me a nice Aussie guy? 😉
Oats, blueberries & pancakes! YUM!
I love, love, LOVE blueberries! It’s hard for me to not eat the whole crate. Thanks for the reminder that blueberry season is back.
Fattest Pancakes EVER! = And I LOVE the way they look!!
They look like I just want to make teeth marks in them b/c they are so pleasantly plump and perfect!
Do I love blueberries? Is the sky blue? YES! I adore them!
Great jot on these….yummy 🙂
BLUUUUUEEBS!
I ADORE blueberries too! I eat frozen berries quite often, but I did buy some fresh ones this week. Today, I ate them in my oats for breakfast, in my cottage cheese for lunch, and in my salad as part of my dinner!!
Katie, you’re amazing. I have to have these for breakfast tomorrow.
