Single-Lady Carrot Cake Cupcake


Once upon a time, I devised a super-healthy cupcake to bring to a nursing home.

A Popularity Contest

Voted most popular? The 24-Carrot Cupcakes.

With their good-for-you stats and delicious taste, it seemed everyone in bloggieland wanted to be their friend. However, the cupcakes must’ve done something to fall out of favor with the “in” crowd; recently they’ve felt very lonely. How lonely? Why, single-lady lonely, of course!

Single-Lady Carrot Cake Cupcake

(Serves One!)

  • 30g (scant 1/4 cup) flour
  • 20g applesauce, oil, or pre-melted margarine (scant 1T plus 1 tsp)
  • a little over 1/16th tsp salt
  • about 1T shredded carrot (20g)
  • 1T water or milk of choice (or a little more if needed)
  • 1/4 tsp each vanilla extract, cinnamon, and baking powder
  • sweetener, such as 1 packet NuNaturals stevia or 2 tsp sugar

Combine all dry ingredients, then mix in liquid (including applesauce, if using). Transfer to a muffin tin, ramekin, or even a mini loaf pan. Bake in a pre-heated oven at 325F, for 12-15 minutes. Or try cooking it in the microwave!

I iced my carrot cupcake with Healthy Cream-Cheese Icing.

And added a little shredded carrot for panache.

Super Bowl Sunday

How did you spend your Sunday? Did you watch the Super Bowl?

Football’s not my favorite sport to watch (that’d be hockey). However, depending on the teams involved, I’m sometimes interested in the Super Bowl. This year, not so much. But I did go to a party… and I did bring along a healthy chocolate cake. More on that later this week! And thanks to everyone who weighed in on yesterday’s post. There didn’t seem to be any clear-cut winners, but I’d love to hear your thoughts if you haven’t yet left them.

    I made these last night! So delicious! My parents loved them (which is great because my dad has a big sweet tooth and I’m trying to learn to make healthier options for him, dessert-wise). Thanks Katie. You have no idea how much of a relief it is to find healthier desserts for my family!

    Also, I tried making the chocolate-raspberry fudge cake again last night (I’d asked you about it yesterday) and just added a tablespoon more cocoa, and it turned out exactly how I wanted!

    I also made Fro-Co a couple of days ago and it was seriously like heaven.

    i just made this and it is amazing!
    i subbed oats for the flour and added in a few raisins. delicious!
    i didnt have any tofu in my fridge, so for the frosting, i mixed some soy cream cheese and soy yogurt with a little agave and put that on top.

    Wait a sec… did that say “try it in the Microwave”????!!! Please explain?? i ask because I currently am without a working oven and if i can use my microwave, that would be just AWESOME!!! 😀

      I know people have successfully made the recipe in the microwave. Times will depend on your microwave strength, but it DOES work :).

    I know I’m late to stumble upon this post, but I am SO EXCITED about this. I have recently been trying to eat “healthier”. Gave up Diet Coke (my lifeline) and have been trying to really cut out the processed foods. I LOVE carrot cake and I am so excited to find this gem of a recipe that fits into my diet! I would make the whole recipe of carrot cake muffins but I’m afraid they would be gone in 1 day! Totally making this tomorrow! It will be my first recipe from your website, but probably not my last – you have such awesome ideas!

    I’ve just made this, with oat flour, and it was delicious. I couldn’t wait and ate it still warm from the oven, with lemon icing… heaven 🙂

        It was amazing; just icing sugar mixed with enough lemon juice to make it runny, drizzled on top; I love lemon with carrot cake! I might have just talked myself into making another one too… 🙂

    Just made this! My first time baking with apple sauce and I must say I was very impressed- it rose but didn’t taste soapy like other vegan cakes I’ve tried to do. Lovely stuff!

    I used regular whole wheat flour, added three crushed walnuts, and frosted it with vegan cashew cream cheese frosting. Eating it was like sliding down a rainbow onto a fluffy cloud. Thank you for the recipe!

    I just had this recipe (instead of cream cheese frosting, I used sugar free pudding and a drizzle of honey on top). It was delishus! Absolutely satisfied my sweet tooth!
