Chocolate Chip Cookie Dough Pancakes

Chock full of hearty oats and melty chocolate chips, you’ll feel like you are eating cookie dough for breakfast!

Hmm. The same can be said for my Cookie Dough Baked Oatmeal.

I guess I just really like chocolate for breakfast.

No, I didn’t really top my pancakes—the ones I actually ate—with chocolate syrup. But I’d cooked a batch the day before and put them in a plastic bag to stay fresh. Well, silly me didn’t know that if you cover a batch of pancakes, they get gooey-moist and go bad. No worries; I now had a whole batch of pancakes to use for a crazy photo shoot. So the pancakes didn’t go to waste. (I hate wasting food.) And the next day, I quickly made up a new batch to eat for real.

(Serves 1-2)

  • 1/3 cup spelt or white flour (40g)
  • 1/3 cup rolled oats (40g)
  • 1/2 tsp pure vanilla extract and optional 3 drops almond extract
  • pinch stevia OR 2 tbsp brown sugar
  • 1/8 tsp salt
  • 3/4 tsp baking powder (and optional pinch baking soda for flavor)
  • 1/2 tsp ener-g egg (or just add extra baking powder)
  • up to 1/2 cup water or milk of choice
  • chocolate chips!

Mix all the dry ingredients. (This can be done days in advance.) Put liquid ingredients into dry, then stir. Cook on medium-low, flipping 1/2-way through.

    YUM! We are out of chocolate chips, so we made these without them…for lunch. I knew I needed to add something kind of protein and something else to replace the chips. I made a pb syrup out of a little cream cheese, brown sugar, pb, & milk. It was so good! I also decided to stack two pancakes and “stuff” them with a little pb & let the kids dip in syrup. Much to my surprise, they didn’t care for the syrup, but had seconds on the pb stuffed pancakes. These will definitely be in our lunch rotation!

    Yum! This has always been my favorite “weekend” recipe 🙂 Today I made this recipe but I didn’t have any chocolate chips so I added a melted banana instead. Oh. My. Gosh…it was AMAZING! I added a bit of cinnamon and nutmeg and have now figured out my favorite new recipe! Just thought I’d share 🙂

    If I don’t like the texture and taste of oats do I need to double the flour or just add a little bit more?

    I make these several times a week and they are delicious. I sometimes sub about 1/4 of the flour for almond flour. Anymore than that, and they get too crumbly, but the almond flour adds a nice flavor to them and makes them a tad bit healthier.

    Made these for the first time yesterday morning. What a flawless recipe! You are so awesome Katie. These, along with your brownie batter pancakes and red velvet pancakes, are likely just the best pancakes I have ever had (although these I think are my very favorite!). I have tried a lot of different pancake recipes since going vegan, but yours are by far the best. I can’t wait to try all the other pancake recipes of yours. Thanks so much Katie 🙂

        So this week I have proceeded to make your oatmeal raisin cookies, twice, the mint chocolate chip cupcakes, and now these pancakes!!!!!!!! They have all turned out fantastic!! I did discover that I should stick with the recommended amount of sugar for the cookies, they are way better that way then when I reduced the sugar. I used whole wheat flour for both the cupcakes and the pancakes. I am so happy to have stumbled upon your blog on pinterest!!! The cupcakes and pancakes were for my son’s 7th birthday and they thought they were eating so unhealthy….it was so fun to tell him that they were healthy!

    I just made these! …Well, kind of. I started to make them and discovered that I was out of chocolate chips. Instead of buying more, I put some cocoa powder in the batter. Then I added a chopped up banana and spread peanut butter between the pancakes. Delicious! I love this blog!
