Chocolate Chip Cookie Dough Pancakes

Chock full of hearty oats and melty chocolate chips, you’ll feel like you are eating cookie dough for breakfast!

Hmm. The same can be said for my Cookie Dough Baked Oatmeal.

I guess I just really like chocolate for breakfast.

No, I didn’t really top my pancakes—the ones I actually ate—with chocolate syrup. But I’d cooked a batch the day before and put them in a plastic bag to stay fresh. Well, silly me didn’t know that if you cover a batch of pancakes, they get gooey-moist and go bad. No worries; I now had a whole batch of pancakes to use for a crazy photo shoot. So the pancakes didn’t go to waste. (I hate wasting food.) And the next day, I quickly made up a new batch to eat for real.

(Serves 1-2)

  • 1/3 cup spelt or white flour (40g)
  • 1/3 cup rolled oats (40g)
  • 1/2 tsp pure vanilla extract and optional 3 drops almond extract
  • pinch stevia OR 2 tbsp brown sugar
  • 1/8 tsp salt
  • 3/4 tsp baking powder (and optional pinch baking soda for flavor)
  • 1/2 tsp ener-g egg (or just add extra baking powder)
  • up to 1/2 cup water or milk of choice
  • chocolate chips!

Mix all the dry ingredients. (This can be done days in advance.) Put liquid ingredients into dry, then stir. Cook on medium-low, flipping 1/2-way through.

    These looked so good and I tried them but they came out really lumpy and wouldn’t cook all the way through. I’m thinking it was the oats I used, is there a difference between rolled oats and the quaker oats that come in that big container? I know the mistake has to be on my end because these look so awesome!

      Depends on if you used quick oats or regular. And what flour?

        I believe I used regular, and I used ordinary all purpose flour. Its probably just my lack of skills when it comes to pancakes, I can make almost anything but pancakes and I don’t work so well.

          Maybe make them smaller? If you make small pancakes, it gives the middles a chance to cook before the outsides burn.

      Can you please give more specifics than that. It’s impossible to know what you did wrong unless you give more specifics about the ingredients you used. Others have made this successfully, so I know it’s not a misprint in the recipe. The more detailed you can be, the better :).

    I just made these pancakes this morning and they are wonderful. 🙂 Thanks for another wonderful recipe. (My other favorite of yours is the single lady cupcake)
    My only added in treat: 1/2 scoop protein powder (in chocolate of course)

    My only problem is when I used myfitnesspal.com to add up the calories it was a heck of a lot more than what Allie (your other reader) came up with.
    I used your recipe as directed and mine were 356 calories (not including the protein powder) with the protein powder it was 426 calories.

    Of course, sorry for being vague!
    I matched the recipe pretty much to a T. I did the baking powder option in replacement of the ener-G egg, and I used almond milk for the liquid. I also used white flour.

      Arispa, you probably just used the whole 1/2 cup liquid instead of adding only as much as needed to arrive at the correct consistency. Next time just add liquid as needed. 🙂

    These are delicious!! Was the reader who calculated the calories only talking about half the recipe? The whole recipe (excluding chocolate chips) is at least 270 calories.

    I woke up wanting something simple, filling, healthy, and involving chocolate. These absolutely did the job. In fact, they made my Saturday. I didn’t have chocolate chips but found some unsweetened baker’s chocolate and chopped two squares of that to make shaved chocolate chunks. Consequently, the pancakes were not very sweet but were very rich and filling. I could only eat two, and saved the rest for later (using your suggestion NOT to cover them). Thank you! I’ll be making these again, and I also look forward to trying the rest of your pancake recipes!

    This has got to be one of my favourite foods ever! Let alone breakfasts! I made it for my nephew and niece once and they LOVED it!

    I’ve made it a few times and I can give a hint, when mixing the ingredients before adding the chocolate chips, bar-mix the wet and dry ingredients together to get a really smooth consistency. It’s still chewy and delicious but they look like perfect choc-chip cookies and aren’t as lumpy.
