Hmm. The same can be said for my Cookie Dough Baked Oatmeal.
I guess I just really like chocolate for breakfast.

No, I didn’t really top my pancakes—the ones I actually ate—with chocolate syrup. But I’d cooked a batch the day before and put them in a plastic bag to stay fresh. Well, silly me didn’t know that if you cover a batch of pancakes, they get gooey-moist and go bad. No worries; I now had a whole batch of pancakes to use for a crazy photo shoot. So the pancakes didn’t go to waste. (I hate wasting food.) And the next day, I quickly made up a new batch to eat for real.
Cookie Dough Pancakes
(Serves 1-2)
- 1/3 cup spelt or white flour (40g)
- 1/3 cup rolled oats (40g)
- 1/2 tsp pure vanilla extract and optional 3 drops almond extract
- pinch stevia OR 2 tbsp brown sugar
- 1/8 tsp salt
- 3/4 tsp baking powder (and optional pinch baking soda for flavor)
- 1/2 tsp ener-g egg (or just add extra baking powder)
- up to 1/2 cup water or milk of choice
- chocolate chips!
Mix all the dry ingredients. (This can be done days in advance.) Put liquid ingredients into dry, then stir. Cook on medium-low, flipping 1/2-way through.

THese pancakes were AWESOME! Instead of brown sugar or stevia as a sweetener, I used two drops agave, and a heaping teaspoon of soy protein powder(that stuff is so sickly sweet!). The pancakes were sooooo good, and just like the last time I made one of your pancake recipes, I couldn’t even finish the mini-batch! These are so very filling and delicous, I was quite pleasantly surprised (= Could you try to make a peanut butter cookie pancake?
Ummm now I am wondering why I haven’t done that already! I need to get on this! Will definitely be trying a pb version! 🙂
I made these this morning for breakfast. They were so delicious! My dad had some as well and he is sooo picky. He said, these are a keeper. Don’t forget them. I said I won’t! =)

I know I’ve already commented that I love these, but while I had this page up on my browser again, I thought I’d let you know that these have become my new favorite go-to when I’m craving a cookie. It’s so nice to be able to make just one or two cookies instead of a whole batch! Great for satisfying cravings without giving you too much temptation 🙂

I’ve just made these, using WW flour, 1tsp ground flax and 1tsp Agave instead of the sugar.
These pancakes are JUST LIKE pillow-soft chocolate chip cookies!! Too good!! ((I did use about 50g chocolate chips..!!))
I have just found Sunvita dark chocolate chips and they are so delicious!! Have you thought about somehow making chocolate pancakes with a peanut butter ((or banana butter would be awesome!!)) swirl?? I think I will have to try this soon ((just as soon as I buy some more peanut butter, that is!!))

Your recipes are amazing!!!! I was wondering if you could sub out almond or coconut flour for the whole wheat and if so would I need more eggs? Does this work for your other desserts too? I would caution against using ALL coconut or almond flour. I’ve always heard that they are too crumbly alone and need to be subbed with 1/2 of another flour like ww pastry (or rice flour and some xantham gum). Also, coconut flour sops up liquid like crazy! So you might need more liquid too.
