
These bars have a little bit of everything.
Soft and gooey, delightfully chewy. And very chocolatey!
Filled with all sorts of delicious & wholesome ingredients, like oats and berries, and chocolate chips. These chocolate chip oatmeal bars are just the thing for people who don’t want to choose; for people who want to have it all.


Chocolate Chip Everything Bars
(makes 12-16)
Adapted from White Bean Blondies.
- 1/4 cup rolled or quick oats (20g)
- 3/4 tsp baking powder
- 1/8 tsp baking soda
- 1/4 tsp salt
- 1/4 cup shredded coconut (regular or reduced-fat) (15g)
- 1 (15-oz) can garbanzo beans or white beans, drained and rinsed (250g after draining)
- 1/4 cup xylitol or sugar or evaporated cane juice (40g)
- 2 NuNaturals stevia packets, or omit and increase sugar to 1/2 cup
- 3 tbsp coconut or vegetable oil (30g) (I can’t vouch for the resulting taste if you omit this or sub something in its place.)
- 2 tbsp applesauce (30g)
- 2 tsp pure vanilla extract (8g)
- 3-5 tbsp chocolate chips, plus more for the top
- 1/4 cup chopped walnuts or pecans (30g)
- 1/2 cup freeze-dried berries (28g)(or dry fruit such as raisins)
Preheat oven to 350 F and grease an 8×8 square pan. Combine the first 11 ingredients in a food processor (not a blender), and blend until completely smooth, scraping down the sides as necessary. Stir in the remaining three ingredients, transfer to the pan, and sprinkle some extra chocolate chips on top, very lightly pressing them down into the batter. Bake 30 minutes, then let cool completely before cutting into chocolate chip squares or chocolate chip bars. I have a question though, where is the difference between a blender and a food processor? And where does a handheld blender fit in? And which ones can you recommend? Do I need both (I already have a handheld one)? Which brands are good? Thanks for your help!
Hi Tascha! Lots of questions here, but I’m guessing by handheld blender you mean either an immersion blender or a hand mixer (like for cake batter)? In either case those definitely wouldn’t work for this. Regular blenders are normally taller and best suited to making drinks like milkshakes and smoothies, and have a smaller set of blades at the base. Food processors come in different sizes but are usually cylindrical in shape with a wide and sharp S-blade. That’s what you want for something with beans to get a smooth texture.
I mean an immersion blender, yes 🙂

Freeze dried berries are such a wonderful addition to the standard chocolate chip bar/cookie. What a great idea! I’m a fan of recipes that use “everything” you can round up from the pantry.
Where do you get your freeze dried berries from? I have trouble finding them in stores. These look super yummy. I know what you mean about having too many choices. As much as I love restaurants with big menus, I always have to read the menu ahead of time because it takes me forever to decide!
I’ve seen freeze dried berries at Whole Foods. Trader Joe’s might be a good place to look as well.
I have actually found freeze dried fruit at my local Wal Mart. It’s in two different spots; with the dried fruit and on the top shelf in the cereal aisle above the natural/organic cereals. Hope this helps!

I hate making choices. Too many options just overwhelm me. When I go into a clothing store I usually do a quick runthrough to know what I’m dealing with then go back and browse more closely. I never understood why I do this until I read about HSP’s – Highly Sensitive Person. Being an animal lover too, it all made sense. 🙂
Hehe, I joke that the reason I wear mostly black and am vegetarian is that it makes everyday choices easy. I’d rather save my brain power for other things:)
When you have instructions like “combine the first 11 ingredients” it would be really helpful if those ingredients had a space or something between them and the next set of ingredients. Three is easy to count the bullet points, 11 gets a bit cumbersome.

I am literally the worst at making decisions! I make people make them for me a lot… Which probably is t good! But these look pretty good! I’ve still never tried the beans dessert stuff but I might eventually.

Oh my goodness, these look delicious! I’m terrible when it comes to making decisions. Usually everything just looks so good when I go out to eat that I never know what to get, and then someone else gets something and I end up wishing I got what they did. I love going out to eat with people who don’t mind sharing, because then we can all get different dishes and try a little bit of everything.
I like some choices, like big, wonderful food menus, but when it comes to too many cookie choices or a “you decide, Hannah. I don’t care” choice, then I can’t stand them! I just end up stressing out, or making lots of different cookies!
