
These bars have a little bit of everything.
Soft and gooey, delightfully chewy. And very chocolatey!
Filled with all sorts of delicious & wholesome ingredients, like oats and berries, and chocolate chips. These chocolate chip oatmeal bars are just the thing for people who don’t want to choose; for people who want to have it all.


Chocolate Chip Everything Bars
(makes 12-16)
Adapted from White Bean Blondies.
- 1/4 cup rolled or quick oats (20g)
- 3/4 tsp baking powder
- 1/8 tsp baking soda
- 1/4 tsp salt
- 1/4 cup shredded coconut (regular or reduced-fat) (15g)
- 1 (15-oz) can garbanzo beans or white beans, drained and rinsed (250g after draining)
- 1/4 cup xylitol or sugar or evaporated cane juice (40g)
- 2 NuNaturals stevia packets, or omit and increase sugar to 1/2 cup
- 3 tbsp coconut or vegetable oil (30g) (I can’t vouch for the resulting taste if you omit this or sub something in its place.)
- 2 tbsp applesauce (30g)
- 2 tsp pure vanilla extract (8g)
- 3-5 tbsp chocolate chips, plus more for the top
- 1/4 cup chopped walnuts or pecans (30g)
- 1/2 cup freeze-dried berries (28g)(or dry fruit such as raisins)
Preheat oven to 350 F and grease an 8×8 square pan. Combine the first 11 ingredients in a food processor (not a blender), and blend until completely smooth, scraping down the sides as necessary. Stir in the remaining three ingredients, transfer to the pan, and sprinkle some extra chocolate chips on top, very lightly pressing them down into the batter. Bake 30 minutes, then let cool completely before cutting into chocolate chip squares or chocolate chip bars. These look delicious and surreptitiously not horribly unhealthy — cheers! As for choices: I’m with you on Forever 21, H&M, long restaurant menus, etc. … definitely overwhelming. I think studies show that most of us are happier with our decisions and less frustrated by the process when you have a limited number of choices (picking from among 3 chocolates rather than among 21).
I love Forever 21, when I have the patience! Sometimes I love to shop around and sometimes it would be nice if the store wasn’t so big and loaded with 1,000 different racks lol. …..Lately I have been in a lunch rut and was just saying I wish I didn’t have much to choose from therefore I wouldn’t need to make a decision on what to eat. Lunch is my least favorite meal and I can never decide what I feel like eating.
I have made your cookie dough dip with beans however have yet to add it to baked goods. If I hadn’t tried the dip I would think this was crazy but since the dip is really good im sure these are too! From the recipe it kind of reminds me of the brownies made with black beans, which are surprisingly pretty tasty 🙂
These look delicious and I plan to make them today! But a question- I don’t have applesauce so what could I sub for that? I hate to run out and buy it just for two Tbsps of applesauce.
Would ground flax work? If so how much?

I bought the little snack-sized applesauces that come in a 6-pack. With one of the applesauce snack containers, I made two batches, with a little applesauce left over, and I’ve got 5 containers waiting in my pantry for when I need them.
Do you use sweetened coconut? Like from the grocery store baking aisle?

I’m the most indecisive person on the planet! I have to read over restaurant menus online before actually going out to eat because it takes me at least 30 minutes to decide what I want. And in the grocery store, when I’m supposed to choose between multiple brands of dark chocolate, I fail every time — I buy them all! Your Everything Bars would be perfect for me, although I might skip on the nuts and use extra berries or shredded coconut instead. Yum!
Made these over the weekend when I happily found a can of Northern beans hiding in the back of my cupboard, and they’re so fun! Love all the different flavors going on in every bite. I used dried cherries and sliced almonds as my fruit and nuts (love the cherry-almond-chocolate combo), which worked really well. My bars are kind of thin but they’re filling even cut into 12 pieces. 🙂
I made these for a BBQ yesterday…only told a few people what was in it. I put the pan on the table at dessert time and in 10 minutes the whole pan was gone!! I gone got a little bite!!! Everyone loved them and couldn’t beleive what the ingredients were when I told them!
I’m the same- too many choices can be overwhelming, and let’s get real you can’t have one of everything ha. Love the idea of these bars!
Hi Katie – wow! What an awesome site this is. Just stumbled on it and just love it and the contents. I adore my puds but as I am on a weight loss plan (34lbs lost so far….bit more to go!) I don’t get to have many. There are a number of really good, nutritional, low fat, no sugar recipes that I will be using when I am cooking for guests – guess that means I can have some too!!
For the sugar, could you sub agave or maple syrup? Or would the end result be to gooey? Help please!
I am with you on the decision making! When I’m shopping, I like to have a lot of options, though. I’m picky about clothing, mostly because I’m big busted and don’t have a specific style, so the store needs to have a good selection. However, restaurants that have menus that are like 10 pages long is just too much for me. Really, even 5 pages can be too much!!!
