Healthy Chocolate Mousse

Healthy Chocolate Mousse

(Serves 2-4)

  • 6 oz Mori-Nu silken-firm tofu (Click for a Soy-Free Chocolate Mousse Recipe)
  • 1/2 tsp cocoa powder
  • 3/4 cup chocolate chips, or 1 and 1/4 chocolate bars in the flavor of your choice (3-oz bars)
  • 1/2 tsp pure vanilla extract
  • 1 tbsp milk of choice
  • 1/16 tsp salt
  • pinch uncut stevia OR 2 tbsp sugar or sweetener of choice

Melt the chocolate, either on the stove or in the microwave. Then throw everything into a Magic Bullet or food processor and blend until super-smooth. (I used a Magic Bullet. If your food processor is really big, or if you’re using a blender, it might be a good idea to double the recipe in order for the contents to blend smoothly.)

    This was so, so creamy, rich, and delicious! My fiance was so funny when he found out it was tofu…shock, hurt, confusion, then apathy all came across his face. Kind of a “Seriously?!-I-can’t-believe-you-tricked-me-there’s-no-way-this-is-tofu-you-know-what-it’s-so-good-I-really-don’t-care” kind of moment, all in about 5 seconds…the one comment I’d have to say is to either use less chocolate or a more bitter chocolate because to me it was incredibly sweet with 3/4 c. of regular semi-sweet chocolate chips. But it was delicious! I especially like it left over the next day with some sliced strawberries and toasted almonds as a mid-afternoon snack 🙂

    Have you tried freezing this? I just made a batch–am eating it now–and it is GOOD!! Thanks so much for all of the recipes on this site. I am a new mom and find myself craving sugar, so it’s good to be able to make delicious desserts without loads of sugar.

    I hope no one takes offense to this, but I’ve never tried or really want to try tofu. Is there another substitute for this? I’m assuming eggs but not sure. What do you recommend for this recipe?

      It doesn’t taste like tofu at all. It is so chocolatey and smooth – very rich. My extremely picky child and my non-healthy-dessert-loving husband BOTH loved this. It tastes like real, non-healthy mousse.

      You can also try sweet potato and/or avocado. Sweet potato makes for a light, fluffy mousse, while avocado yields a more smooth, rich pudding. The chocolate masks the flavor of any base, really, but using eggs would be difficult because you would need to constantly whisk the mixture over a double boiler to slowly cook the eggs without scrambling them. As an aside, tofu is delicious; you don’t know what you’re missing!

    I made this mousse for my wife/mother of my child and it was a big hit. My son professed “I LOVE YOU” and when momma gushed ‘Thank you’ he retorted “I was talking to my food!” It was super simple to make and super delicious.

    How do you keep your chocolate from hardening when it touches the other ingredients? I had chocolate stuck to the side of my magic bullet. So delicious though! I could eat the whole thing no problem.

    I came across you’re blog on pintrest and i must say all of your recipes look yummy! I gave up chocolate this past christmas…well I just had my wisdom teeth pulled and I decided it would be a great time to try your chocolate mousse pudding….and O MY! I don’t think I can give chocolate up again!
