I was completely convinced Kate Middleton would have a girl.

There’s a recipe called “Pink Princess Cake” going in my cookbook that I decided to take out and post today… or really last week because I guessed the baby would be born July 14th. Obviously I have no future as a psychic.

Or a gambler.

Seeing as I’m already 0 for 2, I’m not even going to try! According to UK betting agents, George and James are frontrunners, with Henry and Alexander close behind.

Scarily enough, some people actually put money down on the names Voldemort and Snape. 😕

Luckily, no special skills in divination are required to make a rich chocolate fondue perfect for celebrating any occasion. All you need is chocolate.

And luckily, I just so happen to have a very large supply of chocolate!

This is a lightened-up recipe for traditional chocolate fondue.

The heavy cream, margarine, and corn syrup called for in many versions of the recipe have been omitted, and I’ve combined three different types of chocolate, just enough milk, and a pinch of salt and vanilla extract in such a way that the final product maintains the same richness and creaminess of the original.

Lightened-Up Vegan Chocolate Fondue

  • 3/4 cup milk of choice (180g)
  • 2 tbsp cacao or cocoa powder (10g)
  • 5 oz semi-sweet chocolate chips
  • 5 oz chopped dark chocolate (or 5oz more chocolate chips)
  • scant 1/8 tsp salt
  • 1/4 tsp pure vanilla extract
  • optional: 1/2 tbsp amaretto (omit the vanilla extract if using)

Whisk milk of choice, cocoa, and salt in a small saucepan. Bring to boil. Once it boils, lower to LOW and add all of the chocolate. Stir until the chocolate melts and is completely creamy, with no lumps (about 2-3 minutes). Turn off the heat and stir in the vanilla extract or amaretto. Transfer to a fondue pot or serving dish. Serve with sliced fruit, graham crackers, or anything you think would taste better with a coating of chocolate. (Read: everything!)

    I have never had fondue before in my life. Ever. Not really sure why, but when I was younger I was very picky when it comes to the food that I eat. Unfortunately, now I cannot eat any fondue because I am lactose intolerant. 🙁

      This recipe would be perfect for you then! Just use a lactose-free milk such as almond or soy milk and vegan chocolate chips. Katie is a vegan, so her recipes are generally free of lactose.

    I just want to say that I’ve recently found your stockpile of deliciously not-so-naughty recipes, and I love it! Ever since I’ve discovered how much I love baking, about a year ago, I’ve devoured dessert & food blogs. But then, a couple months later, my family decided to try to eat healthier. More like my mom and I, but the others *sometimes* will try something I bake. (Though a s’mores pop tart still trumps cookie dough baked oatmeal in their eyes!) We’ve gone mostly paleo/primal, basically eating like I’m vegan with some meat allowed. Hey, but when is there chicken in cookies?
    I thought thought I’d be confined to plain ol’ fruit and bitter hunks of unsweetened chocolate (did I mention the major major refined sugar restriction?) Until I found your blog! (Hey, I’m in highschool. I should be allowed to wait until I’m at least 30 to be strict on stuff like that!)

    Interesting idea, sounds easy, but I’m surprised you don’t use a double boiler for the chocolate so it doesn’t burn. Do you stir constantly instead?

    I thought girl too, guess I was influenced by friends having female babies! I like James…

      I guess it’s because of all the extra liquid in the recipe. I’ve never had a problem with this… Normally I DO use the double broiler method (or I microwave the chips until not-quite-fully-melted and then stir to fully melt), but in this recipe it’s not needed.

    Love, love your recipes! I need chocolate to be free of soy and dairy, so I just melt Enjoy Life chocolate chips with canned coconut milk. It is a easy way to get my chocolate fix!

    Yumm That fondue looks delicious! There are a lot of fondues that are either too heavy or too sweet, but this one sounds perfect. For the royal baby name, I’m betting on Henry. I already know two little boys that are named that, so I think the name is having a comeback.
