Food Processor Dessert Recipe

Just throw your ingredients into a food processor, and let it do the work.

Press the resulting crumbly dough into a pan lined with wax or parchment paper, cover with the coconut frosting, and refrigerate to set.

The recipe is adapted from my Ultimate Unbaked Brownies; and just like with the original version, these wholesome brownie snack bars can be made without an oven.

The finished brownie bars need no refrigeration and are great for packing into a lunchbox or as a healthy after-work snack.

Ingredients

  • 6 tbsp cocoa powder
  • 2 1/2 cups pitted dates (for keto, try these Keto Brownies)
  • 1 1/2 cup raw walnuts or pecans
  • 1/2 cup shredded coconut
  • 1/4 tsp + 1/8 tsp salt
  • 1 tsp pure vanilla extract
  • 1/3 cup chocolate chips or sugar free chocolate chips
  • coconut frosting (listed below)

Instructions

  • Process all of the above ingredients—either with or without the chocolate chips—in a high-quality food processor until fine crumbles form. Stir in chocolate chips if you didn’t add them earlier. Grease an 8-inch pan or line with parchment or wax paper. Transfer the dough to the pan, and press down as firmly as you can to evenly distribute.
Coconut Frosting: Stir 1/2 cup softened coconut butter with powdered sugar or stevia to taste. (Very gently heat your coconut butter to get it soft – If it’s still not softening, stir in some melted coconut oil.) Spread on top of the bars, then sprinkle on 3-4 tbsp shredded coconut if desired, and press down. Refrigerate 10 minutes or so to harden the frosting. The brownies can either be refrigerated (or frozen) or left out at room temperature. If you live in a super-hot climate, I’d recommend refrigerating so the frosting doesn’t get melty.

Do you use dried shredded coconut or a different kind?

This turned out lovely…..just as soon as I added the liquid ingredients missing from the recipe. No problem I just looked at the no cook brownies on the same page.

  4. Jacqueline says:

This looks great but like a lot of your no bake recipes, it contains dates, which I cant have. Is there a substitute?

    1. Chocolate Covered Katie says:

Dates make up the bulk of this recipe, so you really can’t leave them out here and I’d recommend just trying a different brownie recipe altogether, such as the Chocolate Zucchini Brownies or Vegan Brownies in my previous post. Hope that helps!

      1. Trisha Z says:

Dried figs with a bit of warm water added makes a great substitute actually.

  5. Alanna says:

These look so good! I haven’t had nearly enough time to play in my kitchen lately, but I just ordered some goodies from Nuts.com (thanks, Katie!) and hopefully those will inspire me to make some new recipes!

    1. Abby says:

I just ordered too. You kinda had me sold at the mention of banana flour. I had to see what it all was about.

  6. Katie @ Katrina's Clean Cooking says:

These look delicious!! Would desiccated coconut work instead of the shredded coconut, or would that be too dry?

    1. A H says:

You’ll have to experiment to see how it works. If you do, let us know the result.

      1. Katie says:

Yep, the desiccated coconut worked really well! They were delicious!?

  7. Lucie says:

Looks great! The chocolate chips have sugar?

    1. A H says:

Katie has a recipe for raw chocolate chips in her cookbook. Or there are many brands at stores that are sugar-free, such as Lily’s.

  10. Kathryn says:

I can’t wait to try these! I bought some dates and coconut (among a few other goodies…) from Nuts.com, so I’ll make them as soon as my order arrives. Thanks for the deal!

Thank you so much for the sure recommendation. I am constantly seeing recipes on your blog and many of the other healthy blogs I follow that call for ingredients I don’t have and have sometimes never even heard of, many times they’re not even available at whole foods. So thanks for the link, and the brownies also look really divine.

    1. Allison says:

Sorry that should say site recommendation.
