With melted chocolate swirled into every bite.
This is a breakfast that will definitely make you want to get out of bed in the morning.
And you can even make it the night before or make extras and freeze leftovers for a rainy day when you don’t want to cook in the morning.

This is a huge reader favorite recipe – it has all the deliciousness of eating a Mounds bar for breakfast!

Coconut Cookie Dough Baked Oatmeal
(serves 1)
- 1/2 cup rolled oats
- 1/8 tsp salt
- stevia or sugar of choice
- 1/4 cup applesauce or banana
- optional 4 drops coconut extract
- 1/4 tsp pure vanilla extract
- 1/4 cup milk of choice or canned coconut milk
- 1-2 tbsp pre-melted coconut butter (Coconut-Free Version)
- optional handful chocolate chips, plus extras for the top
Baked Cookie Dough Oatmeal: Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boatmeal cakes, two 1/2-cup ramekins). Cook for 20 minutes or more, until it’s firm. Finally, set your oven to “high broil” for 5 more minutes – or simply just bake longer, but broiling gives it a nice crust. Don’t forget to spray your ramekins first if you want your cakes to pop out.

Hi Katie!
I would love to use all of those nutbutters (plus the coconut butter) to eat on toast, in greek yogurt, and I would LOVE to try them in baking!!
Thanks for the opportunity!
I would make your fudge!
Is there anyway to eat those other than from packet straight to mouth? Oh me oh my they look fabulous!
I already like you on facebook:)
Thank you for the giveaway! I love nut butters. But here in Switzerland, they are VERY expensive, and there is little choice (no coconut butter!!!, no pecan butter, no walnut butter, no macadamia butter, … I know, this is sad).
So, if I had some Artisana nut butters, I would savor them (aka eat them with a little spoon). Or I would make the famous and delicious Cookie Dough Dip!
I will probably just eat the nut butters plain! That or make some yummy fudge.
I retweeted the giveaway on twitter, I am called @fickleida.
Oh an I already like you on facebook 😉
If I won these, I would use them on my gluten free crackers or in some gluten free oatmeal!!! 🙂
I would love to win this because I am a college student on a budget! I love your blog and always want to try the recipes! I would use them to make healthy snacks for me and my roommates! Hope you pick me 🙂
About the coconut butter giveaway…I would definitely use it in this recipe! That and pumpkin cookie-dough dip (which I’m making for my residents for Sunday’s floor meeting). Or I’d just squeeze it into my mouth…just sayin’.
Love your recipes and your positive outlook–I feel like you’re one of my friends! 🙂
I would use the nut butters to bake something super yummy!!! I also retweeted this!!
I’d probably use the nut butters in some kind of oatmeal concoction!
I would love to try this coconut cookie dough oatmeal! Thanks for the give away!
Nut butter straight out of the pouch, of course. If you actually require me to do something else with them, I’d probably put them in oatmeal or some other recipes, provided the flavor wouldn’t be over powered.
I’d definitely try them in my oatmeal!
