Coconut Cookie Dough Baked Oatmeal
(serves 1)
- 1/2 cup rolled oats
- 1/8 tsp salt
- stevia or sugar of choice
- 1/4 cup applesauce or banana
- optional 4 drops coconut extract
- 1/4 tsp pure vanilla extract
- 1/4 cup milk of choice or canned coconut milk
- 1-2 tbsp pre-melted coconut butter (Coconut-Free Version)
- optional handful chocolate chips, plus extras for the top
Baked Cookie Dough Oatmeal: Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boatmeal cakes, two 1/2-cup ramekins). Cook for 20 minutes or more, until it’s firm. Finally, set your oven to “high broil” for 5 more minutes – or simply just bake longer, but broiling gives it a nice crust. Don’t forget to spray your ramekins first if you want your cakes to pop out.

I would use the nut butters in the oatmeal recipe you have here (you had me at Mounds bar) and probably even the raw cookie dough dip. I’m making it for my work’s Thanksgiving luncheon later this week. I’m a bit flummoxed as to what to use as my oil. I don’t want the peanut butter taste. Keep up the great posts! I’d like to win the nut butter so that I can make yummy and more importantly, nutritious, oatmeal for my beautiful momma. Without getting into the terrible details, we almost lost her a few moths ago. Miraculously, she survived (despite what the doctors told us) but has a very long recovery ahead of her. She is currently in a nursing home and unsurprisingly, their food is poor quality and meat-centered. I completely believe that a healthy diet helps healing and try hard to sneak lots of nutritious snacks for her every day. The nut butters would be perfect for giving her the clean amino acids that she needs! Winning would be great because they’re a little too pricey for me at the moment (I’m 22 and now am taking care of my younger brother and sister as well). Thank you!

I most certainly would make this recipe immediately! I haven’t tried it yet because I only have coconut oil, not coconut butter. I would also make your single lady chocolate cake (currently my favorite of your recipes right now) and put a nice big spoonfull of pretty much any nut butter flavor right on top. Yum!
