(serves 1)

  • 1/2 cup rolled oats
  • 1/8 tsp salt
  • stevia or sugar of choice
  • 1/4 cup applesauce or banana
  • optional 4 drops coconut extract
  • 1/4 tsp pure vanilla extract
  • 1/4 cup milk of choice or canned coconut milk
  • 1-2 tbsp pre-melted coconut butter (Coconut-Free Version)
  • optional handful chocolate chips, plus extras for the top

Baked Cookie Dough Oatmeal: Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boatmeal cakes, two 1/2-cup ramekins). Cook for 20 minutes or more, until it’s firm. Finally, set your oven to “high broil” for 5 more minutes – or simply just bake longer, but broiling gives it a nice crust. Don’t forget to spray your ramekins first if you want your cakes to pop out.

    New (and obsessed) reader. I’ve spent much of today reading these amazing recipies and jotting down things I need. I even sent my husband to look for shredded, unsweetened coconut but apparently, that’s not easy to find in the backwoods of Maine (LMAO) or he’s just a man. IDK. I’m freezing bananas for chocolate cake smoothies right now and setting up to make oatmealy goodness in the morning. My daughter (6) and I are both gluten free and Im looking for new ways to make our diets more amazing (and yummy)- I was EVER so happy to find this blog!! (via Pinterest)

    I’ve actually never tried coconut butter, so I’d probably have it with some oatmeal, bananas and peanut butter! Or maybe on top of a single-girl muffin? Either way, I’m sure I’d loooove it- coconut is aaahmazing 🙂

    If I won the butters, I would most definitely use them in this recipe, and other recipes on your blog that contain nut butters, primarily coconut!
    I have NEVER had coconut butter (strange…considering I used to live on an island LOADED with coconuts, which were constantly eaten by my dog–why didn’t he ever share?? -__-)
    I usually make my own nut butters, but lately I haven’t had time. These will come in handy!!!

    If I won the Artisana nut butters, I’d use them to make raw fudge, as well as in my lettuce wraps! (banana slices + raw almond butter + cinnamon in romaine leaves– they’re delicious.)
