(serves 1)

  • 1/2 cup rolled oats
  • 1/8 tsp salt
  • stevia or sugar of choice
  • 1/4 cup applesauce or banana
  • optional 4 drops coconut extract
  • 1/4 tsp pure vanilla extract
  • 1/4 cup milk of choice or canned coconut milk
  • 1-2 tbsp pre-melted coconut butter (Coconut-Free Version)
  • optional handful chocolate chips, plus extras for the top

Baked Cookie Dough Oatmeal: Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boatmeal cakes, two 1/2-cup ramekins). Cook for 20 minutes or more, until it’s firm. Finally, set your oven to “high broil” for 5 more minutes – or simply just bake longer, but broiling gives it a nice crust. Don’t forget to spray your ramekins first if you want your cakes to pop out.

    I made my own coconut butter as you suggested and it turned out pretty good, but would love to try that brand to compare. I would use them as an ingredient to make “icing” for any of your wonderful muffins or donuts. Plus, I’d just eat it straight out of the container.

    Very interesting your giveaway. I also really like these Artisan products, but in my area they are not all available. Actually, I have to drive at least 4hrs to find a store that sell them. If I’m lucky to win, I will definitely use it in many ways. First, there some recipe on your blog that are really interesting et they use that kind of product. I like to use it in dressing, desserts, etc.

    I loved this picture of you showing coconut butter on a sweet potato! Since I haves loved sweet potatoes in any fashion since I can rememberber not even knowing what those Orange things.my grandma made that I ate were, I would use the coconut butter on one if I won! I may even make a big batch of them since I’m supposed to bring sweet potatoes to thanksgiving this year!

    I’d really love to try the coconut butter as I tried making some but didn’t have a strong enough processor. There are so many of your recipes using coconut butter that I’d love to try instead of just drooling over them online but if I won I think I’d like to try it out in your Chocolate-PB Fudge as it sounds amazing!!
