With melted chocolate swirled into every bite.
This is a breakfast that will definitely make you want to get out of bed in the morning.
And you can even make it the night before or make extras and freeze leftovers for a rainy day when you don’t want to cook in the morning.

Coconut Cookie Dough Baked Oatmeal
(serves 1)
- 1/2 cup rolled oats
- 1/8 tsp salt
- stevia or sugar of choice
- 1/4 cup applesauce or banana
- optional 4 drops coconut extract
- 1/4 tsp pure vanilla extract
- 1/4 cup milk of choice or canned coconut milk
- 1-2 tbsp pre-melted coconut butter (Coconut-Free Version)
- optional handful chocolate chips, plus extras for the top
Baked Cookie Dough Oatmeal: Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boatmeal cakes, two 1/2-cup ramekins). Cook for 20 minutes or more, until it’s firm. Finally, set your oven to “high broil” for 5 more minutes – or simply just bake longer, but broiling gives it a nice crust. Don’t forget to spray your ramekins first if you want your cakes to pop out.

i love your boatmeal recipes, but i rarely have the time to make them in the mornings since i’m usually rushing to get to school. but i just replenished my oatmeal stash, so i’m setting my alarm for a little earlier and i’m looking forward to trying this out tmrw morning 🙂 (yes, i’m a nerd when it comes to oatmeal. oh well. :))
I always make them the night before :). Oh, but I’ve also heard from other people that you can freeze them! I need to try that.
Love,
another oatmeal nerd 🙂
Hi Katie,
Which brand of coconut extract do you use and where did you find it? My roommie’s dad is in the US until Saturday and could get me some seeing as it’s not available around where I live.
Thanks in advance!
Archer Farms, from Target 🙂
Absolutely Gorgeous!! You make the best Oatmeals. 🙂
I just made this recipe for dinner because I went vegan last week and fell in love with your website! 😀 Next, I’m making your cookie dough dip and then! Pumpkin cream cheese bars.
((By the way, it’s delicious)).
Awww 🙂
So excited you liked it!
This has been on my “to eat” list for a while and finally tried it today! Ahhhh! Delectable! Now on the favorites list. 🙂
I had Voskos Greek yogurt (blueberry). And … I don’t really like Voskos. It doesn’t hold a candle to Chobani. So sad.
I don’t know what coconut butter is. Do you think you could use coconut oil?
