(serves 1)

  • 1/2 cup rolled oats
  • 1/8 tsp salt
  • stevia or sugar of choice
  • 1/4 cup applesauce or banana
  • optional 4 drops coconut extract
  • 1/4 tsp pure vanilla extract
  • 1/4 cup milk of choice or canned coconut milk
  • 1-2 tbsp pre-melted coconut butter (Coconut-Free Version)
  • optional handful chocolate chips, plus extras for the top

Baked Cookie Dough Oatmeal: Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boatmeal cakes, two 1/2-cup ramekins). Cook for 20 minutes or more, until it’s firm. Finally, set your oven to “high broil” for 5 more minutes – or simply just bake longer, but broiling gives it a nice crust. Don’t forget to spray your ramekins first if you want your cakes to pop out.

    I love oats in things, but I’m not a huge fan of oatmeal itself – can’t get past the texture. I’ve liked a few baked-oatmeal-type recipes in the past, so when I saw this one I knew I had to try it for me and the kiddos. It was DE-LISH!

    I multiplied the recipe times three and soaked the oats overnight so they would be softer in the morning (it also cuts down on cooking time). I omitted the salt, used coconut palm sugar, and combined different kinds of milk (buttermilk & almond). Next time I’d like to try it with the coconut milk and extract to make it really coconut-y! I did, however, add 2T unsweetened shredded coconut along with a handful of dark chocolate chips. I baked it in my toaster convection oven in a small pan for about 10-15 minutes, topped it with some almond milk to cool it off for the kiddos, and it was a huge hit.

    This one’s a keeper!

    I just made this for breakfast this morning…I was SO sad when it was all gone! I cut the coconut butter to 1/2 Tbsp, used probably a tsp of coconut extract, a pinch of stevia and then topped with a drizzle of homemade chocolate. Oh.my.goodness. So so so good! Thanks for the recipe! 🙂

    AMAZING!!!! I’m not going to lie. I didnt have much expectations for this oatmeal. But I still had to try it just so you could prove me wrong about baked oatmeal. 🙂 I am so freaking happy I made this!!! I could eat it for every meal and I can’t believe the flavor without a bunch of sweetener. Thanks for your incredible recipes!

    HI! I have been in LOVE with overnight oatmeal….I was thinking about trying to make a Cookie dough overnight oatmail…any ideas?

      I have actually never tried overnight oatmeal! Well, not the type that everyone else seems to call overnight oatmeal, where you don’t cook the oats. I should get around to trying it someday! Sorry I can’t be of more help!

      Nichole, I put all the ingredients in the food processor and took a bite before I put it in the micro and I almost didn’t cook it because it was so good uncooked. Will definitely work for muesli/overnight oats, just add a quarter cup more liquid.

    I LOVE your site! But it would be cool if you could have Nutrition Facts attached to all your recipes. I rely heavily on calories….so while some of these things LOOK healthy…they also scare me! LOL

    And can I use them interchangeably?

    Hi, I would like to make this but you have the ingredients and instructions for Cookie Dough Oatmeal Cake listed instead! Clearly whats pictured here and labeled as Coconut Cookie Dough Oatmeal has been cooked stovetop or microwaved. Could we please have the correct recipe? It looks very yummy!
