This cookie dough oatmeal is like eating a warm chocolate chip cookie, with gooey, melted chocolate in every delicious bite!
A variation of the popular Pumpkin Baked Oatmeal.
And now you’ll be wanting a recipe, yes?
Cookie Dough Baked Oatmeal
(Serves One!)
- 1/2 cup rolled oats (50g)
- 1/4 tsp pure vanilla extract
- sweetener, such as 1 1/2 tbsp maple syrup or 1 to 1 1/2 packs stevia (I omitted, but I’ve cautioned you before about my lack of sweet tooth.)
- 1/4 cup unsweetened applesauce (60g) (Or sub banana… it’s awesome this way!)
- 1/4 cup milk of choice, creamer, juice, or water
- 1/8 tsp salt
- Handful of chocolate chips (and a few for the top, too!)
- Optional: unless you like the taste of fat-free baking, add 1 tbsp oil, buttery spread, or nut butter (If oil, scale the milk back a little)
- Optional: 1/4 to 1/2 tsp cinnamon (If you like cinnamon in chocolate chip cookies)
Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boats, two 1/2-cup ramekins). Cook for 20 minutes, or more until it’s firm. Finally, set your oven to “high broil” for 3-5 more minutes (or simply just bake longer, but broiling gives it a nice crust). Don’t forget to spray your ramekins first if you want your cakes to pop out.

If you’re like me and are not trying to lose weight, I definitely recommend including the optional nut butter or oil in the recipe for more calories, because this oatmeal cake really fills you up!

Are there any breakfast foods that don’t fill you up?
I tend to steer clear of cold cereal, because whenever I eat it for breakfast, I’m hungry an hour later! Same thing with waffles or pancakes. In the case of pancakes, I’ll often eat them for snack instead of as breakfast.
Or with something filling, like a Whipped Cream Bowl.

My new favorite breakfast! Although, I find it a bit misleading that the calories are listed at 180. The only way to get it that low is to use unsweetened almond milk and applesauce, leaving out the chocolate chips and sweetener. 200-250 would be a more realistic estimate. Which is not a problem for me, I like a good breakfast. But I know some people don’t.
Honestly, Katie, you cannot go wrong. I’ve yet to make anything on your site that doesn’t come out amazing. I made this recipe just now, but I microwaved it rather than baking it. Took about 3 minutes, and it came out more of a thick, chewy oatmeal texture rather than like a muffin or cake, but so good! I forgot to add the nut butter, so I spread a tsp of almond butter on top while it was still warm…OMG I am totally making this for breakfast every day this week! I did use cow’s milk because I haven’t had the chance to get to the grocery store this weekend to get more vanilla almond milk, so it wasn’t vegan. But still…wow!
Can I use greek yogurt instead of oil/applesauce?
My kind of recipe, thought I was the only one who likes not so sweet, not too rich deserts. This dessert you could eat for breakfast! I would sub raisins for the chips. I just don’t believe in mixing chocolate and oats. Some things are sacred. 🙂

Do you think it could be converted into a bigger batch, then make them muffin sized? Any suggestions on how to do it? (Unsure if I’d need to triple or quadruple the recipe.)
Had this today and wow..YUM! I did all the add in options and with oil and maple syrup it took 25 mins to really bake and I should have gone 30 as they fell apart as soon as I turned then out. AND it made enough to fill two full one cup ramkins! I calculated the nutrition facts and woops haha… I will make a healthier version next time! For the full recipe it was over 500 calories, I only ate 1/2 and was super full so about 260.
Next time I will use stevia, banana, and no oil… Or maybe soy butter… I have but allergies.

First off, I have to say i’m a HUGE fan of your recipes! Of all the ones I have tried, to which there have been a lot, I would have to say that “boatmeal” is my favourite since I literally eat it every day. I have used this recipe many times and have changed it around a bit (ie add various nut butters, add ground flax to help keep it together, add cranberry sauce and pecans, etc, etc, etc) and its always amazing! thank you for revolutionizing breakfast for me!
I would love to take boatmeal another step and make it savory. Have you ever attempted a savory version? maybe adding Daiya cheese, nutriontal yeast, smoked paprika, etc? Has anything NOT worked out?
I know you probably have a million and one recipe ideas on the go, but I just wondered if this could be a thought among many….

Oh my goodness! I’ve been eating this all week with coconut butter as my added fat. Thank you for such a satisfying meal, I don’t think I’ve been able to eat a whole serving yet, and the chocolate bites are my favorite!
