Cookie Dough Baked Oatmeal


This cookie dough oatmeal is like eating a warm chocolate chip cookie, with gooey, melted chocolate in every delicious bite!

A variation of the popular Pumpkin Baked Oatmeal.

And now you’ll be wanting a recipe, yes?

(Serves One!)

  • 1/2 cup rolled oats (50g)
  • 1/4 tsp pure vanilla extract
  • sweetener, such as 1 1/2 tbsp maple syrup or 1 to 1 1/2 packs stevia (I omitted, but I’ve cautioned you before about my lack of sweet tooth.)
  • 1/4 cup unsweetened applesauce (60g) (Or sub banana… it’s awesome this way!)
  • 1/4 cup milk of choice, creamer, juice, or water
  • 1/8 tsp salt
  • Handful of chocolate chips (and a few for the top, too!)
  • Optional: unless you like the taste of fat-free baking, add 1 tbsp oil, buttery spread, or nut butter (If oil, scale the milk back a little)
  • Optional: 1/4 to 1/2 tsp cinnamon (If you like cinnamon in chocolate chip cookies)

Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boats, two 1/2-cup ramekins). Cook for 20 minutes, or more until it’s firm. Finally, set your oven to “high broil” for 3-5 more minutes (or simply just bake longer, but broiling gives it a nice crust). Don’t forget to spray your ramekins first if you want your cakes to pop out.

If you’re like me and are not trying to lose weight, I definitely recommend including the optional nut butter or oil in the recipe for more calories, because this oatmeal cake really fills you up!

Are there any breakfast foods that don’t fill you up?

I tend to steer clear of cold cereal, because whenever I eat it for breakfast, I’m hungry an hour later! Same thing with waffles or pancakes. In the case of pancakes, I’ll often eat them for snack instead of as breakfast.

Or with something filling, like a Whipped Cream Bowl.

    Cereal never ever fills me up! I typically have to eat 3x the recommended serving amount in order to stay full for any length of time. I switched to oatmeal because it’s one of the only breakfasts that’ll hold me over ’til lunch! 🙂

    That looks delicious! I love how you make things in single-servings–it’s awesome and makes things so simple!
    Funny thing is that for me, what fills me for breakfast changes with annoying regularity. There are times when a bowl of oatmeal with maple syrup, some sliced almonds, and dried fruit will keep me full for 3-4 hours, and other times when it works for an hour, tops! Same with other past “winning” combos (yogurt and granola, English muffin with PB&J, etc.). So, I end up just rotating them frequently, and trying new things too. Maybe the oatmeal cake will be the magic solution!!

    Katie – THANK YOU for thinking of us calorie-watchers. I’m not a calorie-counter persay but I do have to watch what I eat, even though I eat healthy vegetarian (mostly vegan, and entirely vegan right now for Lent, actually!) foods. I know some people say if you eat healthy foods you’ll be skinny and it won’t matter what you eat but that certainly isn’t the case for me. I’m at a healthy weight but if I don’t watch it with the nut butters and coconut butter and portion sizes, watch out!! hehe. So thanks for considering us non-metabolically-blessed folks… I appreciate it!

    I love getting a lot of “bang for my buck” when it comes to my food. This recipe is not only yummy, but it is also nutritious and filling (who knew breakfast could be oh so good?). Between your oatmeal/boatmeal/muffin recipes you have reinvigorated my love for the usually hum-drum meal called breakfast! Now, I can’t wait for the sun to rise every morning just so that I can try a new breakfast concoction from you blog! 🙂

    I hear you on the cold cereal not filling you up! There is something about cold cereal that is comforting (maybe because it reminds me of my childhood?), but it never does the trick in regards to long-lating energy. I find that oatmeal, or a vegan breakfast burrito usually do the trick, so those are my go-to breakfast items 🙂

    Hi Katie – Love your blog and recipes. I discovered it just a few weeks ago and have been inspired to come up with some tasty new dessert treats. Anyway, I was just wondering how exactly you put on weight when you were trying years ago. I have a similar problem where I turned to a whole foods/plant based diet (though not vegan) and I guess I have not kept my calorie intake up enough to match my activity level (yoga, walk everywhere!, a little resistance work, heart problems and diabetes run in my family plus I feel better when I exercise). I seem to be in an eating routine and need some ideas on new things to add and try in order to put on some weight. You may have given more specific food ideas corresponding with your active lifestyle during that point in your life in previous posts, but I can’t seem to find them. Plus, I get distracted by all your great looking food and just keep clicking on recipe after recipe!

    Anyway, if you have a second and can give any more advice I’d really appreciate it! Have a great day. Never tried baked oatmeal, but plan to soon! With nut butter for sure!

      Hi J!
      I’m unfortunately probably not the best person to ask. When I went through my “eat as much junk as I possibly can” phase, I didn’t see ANY lasting weight gain because I’d stuff myself so much at one meal that I’d not want to even look at food! Eventually, I just gave up and learned to accept myself the way I am–skinniness and all. I’d love it if more pounds came along, but honestly no one is ever completely satisfied with how she looks, right? 😉
      But I guess I DO have strategies for not losing more weight that might help you: eat calorie dense foods, don’t include a lot of foods with bulk in the same meal (i.e. steamed veggies with nothing on them or salads, cauliflower, etc), and look into raw desserts for healthy–yet calorically dense–treats. And if you have a medical need to gain weight, probably seeing a doctor would be the best thing, because I am definitely not skilled in that area. All I know are my own experiences, and I know everyone responds to things differently. In any case, I’m glad you found me!

    I know it’s weird, but eating oatmeal for breakfast actually makes me HUNGRIER than before I started. It’s very odd. Cold oats fill me up okay, as does cereal, toast, etc. I think my stomach is mixed up. 🙂

    Cereal doesn’t feel me up. Its usually a snack for me!
    I also noticed that if I don’t have a nut butter with my breakfast, I get hungry an hour or two later. Not cool 😉
