Cookie Dough Baked Oatmeal


This cookie dough oatmeal is like eating a warm chocolate chip cookie, with gooey, melted chocolate in every delicious bite!

A variation of the popular Pumpkin Baked Oatmeal.

And now you’ll be wanting a recipe, yes?

(Serves One!)

  • 1/2 cup rolled oats (50g)
  • 1/4 tsp pure vanilla extract
  • sweetener, such as 1 1/2 tbsp maple syrup or 1 to 1 1/2 packs stevia (I omitted, but I’ve cautioned you before about my lack of sweet tooth.)
  • 1/4 cup unsweetened applesauce (60g) (Or sub banana… it’s awesome this way!)
  • 1/4 cup milk of choice, creamer, juice, or water
  • 1/8 tsp salt
  • Handful of chocolate chips (and a few for the top, too!)
  • Optional: unless you like the taste of fat-free baking, add 1 tbsp oil, buttery spread, or nut butter (If oil, scale the milk back a little)
  • Optional: 1/4 to 1/2 tsp cinnamon (If you like cinnamon in chocolate chip cookies)

Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boats, two 1/2-cup ramekins). Cook for 20 minutes, or more until it’s firm. Finally, set your oven to “high broil” for 3-5 more minutes (or simply just bake longer, but broiling gives it a nice crust). Don’t forget to spray your ramekins first if you want your cakes to pop out.

If you’re like me and are not trying to lose weight, I definitely recommend including the optional nut butter or oil in the recipe for more calories, because this oatmeal cake really fills you up!

Are there any breakfast foods that don’t fill you up?

I tend to steer clear of cold cereal, because whenever I eat it for breakfast, I’m hungry an hour later! Same thing with waffles or pancakes. In the case of pancakes, I’ll often eat them for snack instead of as breakfast.

Or with something filling, like a Whipped Cream Bowl.

    This looks awesome! Most breakfasts fill me up… I’m always starving first thing, but I find that it’s more from thirts than anything. A huge glass of water, cup of coffee, and a regular serving of oats/green protein shake/greek yogurt creation = fuel tank filled.

    If it doesn’t do the trick, I just eat lunch early. Or a spoonful of PB. Or both. 🙂

    I am the same way–cold cereal just CANNOT fill me up. No matter how much fat/protein I add, it just won’t stick with me for more than an hour or two.

    Any breakfast could be filling depending on what you do (or don’t do) after it. Cold cereal is enough if you spend the whole morning in front of the TV but if you do a workout, go to school or work or whatever, it is definitely not enough. Another not filling breakfast I just discovered is millet. Either my portion was too small or millet just too light but I am munching baby biscuits while checking my reader and it’s not something I usually do. A warm portion of boatmeal sounds much more filling and, of course, tasty.

    Love it! Just found your blog a couple days ago and having so much fun trying yummy new recipes! I do a lot of bike racing and I think these little boatmeal cakes (made the cinnamon roll recipe for breakfast!) will be great training food! I’m going to make a couple of these to bring on my ride today – can’t wait!

        Love them! I’m whipping up a couple right now to bring on my 5 hour ride tomorrow. Just pop them in a baggy in my pocket and eat while riding, just like a Luna bar, but homemade, which is oh so yummy.

        By the by, tried your Pumpkin Cream Cupcake with sweet potato (because it was sitting around) and it was AMAZING. Thanks!

            Tried this with 1 Tb of peanut butter and chocolate almond milk this AM – just like a peanut butter cup! And super filling with the peanut butter!

    I’ve been looking for different ways to make oats. The idea of eating them out of bowl seems so boring and cumbersome. I’ve wanted to try the breakfast oatmeal cookie, and now I’ll be trying this too!
    For breakfast, smoothies don’t usually fill me up. So I have to eat pb toast on the side or something. Also, (when I used to eat them!) eggs! The traditional breakfast of eggs, toast and “sausage” would leave me starving an hour later. The most filling breakfast I eat is pancakes, or anything that involves home fries. hehe 🙂
