Birthday Girl
A few weeks ago, my little sister flew in from Boston for Thanksgiving. Her birthday also falls close to the holiday, and therefore we held a special birthday dinner for her at my parents’ house.
My sister is a big fan of the Chocolate Chip White Bean Blondies.
So I was eager to try out my newest idea on her, especially since she isn’t a huge chocoholic. (She doesn’t like bananas either. Sometimes I wonder if we’re really related!)

Deep Dish Cinnamon Roll Pie
One of my Gluten Free Recipes
- 1 cup quick oats
- 2 cans garbanzo or white beans, drained and rinsed (500g after draining)
- 1/4 cup applesauce
- 2 and 1/2 tsp pure vanilla extract
- 3 T canola or coconut oil
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 and 1/2 cups sugar or sucanat (Feel free to use less if you’re used to healthy desserts. Or sub some of the sugar with stevia if desired.)
- 2 T cinnamon
Blend all ingredients very, very well in a food processor. Pour into an oiled pan. (I used a 10-inch springform pan, but you can use a smaller pan if you want a really deep-dish pie.) Cook at 350F for around 35 minutes. Let stand at least 10 minutes before removing from the pan. I haven’t tried subbing the sugar with agave, but I do know that many readers have had successfully used agave in my chocolate-chip cookie pie (a similar recipe). So I *think* it would work here as well.
If desired, frost the pie with Creamy Cinnamon Roll Frosting.

Mmmm that cinnamon roll pie looks delicious! Since it’s cinnamon roll flavor, that can totally be considered breakfast… right?! 😉 And you and your sister look so much alike! I have two older brothers and people say I look like both of them, depending on which one I’m with! I personally don’t see it though!

Any flake grain (spelt flakes, kamut flakes… maybe quinoa flakes?) would probably work. Or maybe try ground flax?
Now that we are all getting older I see tons of similarities between my three brother’s and I. Certain pictures I’ll be like WO I’m exactly like Sean here. Which is strange to me because when we were younger we were all entirely different looking. You two are so gorgeous! Glowing 🙂

This recipe looks great! I’ve definitely been hypnotized. And in regards to your sister not liking anything you do, I completely understand… I have a twin sister who would much rather have vanilla over chocolate and cannot stand peppermint in anything!

Firstly, I must say I’m so delighted to have discovered ur website! I recently started getting into baking, but have really gained too much weight from that, and for me, unlike u, that’s really not good!
I wanted to ask you – ur recipes call for putting the cans of chickpeas in a blender, but when I tried to make the big cookie recipe, the chick peas wouldn’t blend! They just get stuck in the machine, and I ended up having to mash them with a fork, which didn’t do a very good job! Is there anything I should be doing differently, like adding some liquid, or blending without other ingredients and then adding the rest…? Thanks!
I don’t recommend using a blender for this recipe. I use a food processor, and it mashes them up perfectly. But the one time I used my Vita-mix, it did exactly what you said. So if you have a fp, I’d use that. (If you MUST use a blender, maybe try it in a few batches?)

It makes one 8-inch or 10-inch pie, so it depends on how big you cut the slices.
You guys look SO alike! My sister and I don’t at all, but we do act really similarly with gestures/expressions and we’re always finishing each other’s sentences lol. Your cinnamon roll pie…I swear I did feel sleepy looking at it lol!
