Birthday Girl

A few weeks ago, my little sister flew in from Boston for Thanksgiving. Her birthday also falls close to the holiday, and therefore we held a special birthday dinner for her at my parents’ house.

My sister is a big fan of the Chocolate Chip White Bean Blondies.

So I was eager to try out my newest idea on her, especially since she isn’t a huge chocoholic. (She doesn’t like bananas either. Sometimes I wonder if we’re really related!)

Deep Dish Cinnamon Roll Pie

One of my Gluten Free Recipes

  • 1 cup quick oats
  • 2 cans garbanzo or white beans, drained and rinsed (500g after draining)
  • 1/4 cup applesauce
  • 2 and 1/2 tsp pure vanilla extract
  • 3 T canola or coconut oil
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 and 1/2 cups sugar or sucanat (Feel free to use less if you’re used to healthy desserts. Or sub some of the sugar with stevia if desired.)
  • 2 T cinnamon

Blend all ingredients very, very well in a food processor. Pour into an oiled pan. (I used a 10-inch springform pan, but you can use a smaller pan if you want a really deep-dish pie.) Cook at 350F for around 35 minutes. Let stand at least 10 minutes before removing from the pan. I haven’t tried subbing the sugar with agave, but I do know that many readers have had successfully used agave in my chocolate-chip cookie pie (a similar recipe). So I *think* it would work here as well.

If desired, frost the pie with Creamy Cinnamon Roll Frosting.

    What beautiful girls you are!

    My siblings and I don’t look alike…my sister in particular has the Irish look…light eyes, light skin, dark hair. And I’ve got the brown hair and brown eyes. But when we get together, everyone can tell we’re sisters because we’re so alike in every other way!

    I never think I look like my sisters but everyone else does! Also here’s my idea for a gingerbread blondie or it could be changed into cookie pie! what do you think?

    1 1/2 cups chickpeas (1 can, drained and rinsed) (250g)
    3 T nut butter (or other fat source) (see nutritional-info link below for fat-free option)
    3/4 tsp baking powder
    1-2 tsp vanilla extract
    1/8 tsp baking soda
    heaping 1/8 tsp salt
    1/2 cup molasses
    1/4 or to taste white sugar
    1 T unsweetened applesauce
    1/4 cup ground flax (20g) (see nutritional-info link below for substitution options)
    2 tsp cinnamon
    1 tsp ground ginger
    1/2 tsp ground cloves
    drizzled with a glaze like this cookie pie

    havent tried this but I plan to!! I feel like it would be great for christmas time (as long as it turns out well =p )

    My sister and I look some what alike, i mainly think that because my mom
    makes us dress up the same, which I don’t like but can’t run away from :(.
    And WOW! looking at this recipe, even i am getting hungry,
    and i just ate a bowl of chocolate frosting! ( long story)

    I wish my sister loved to cook for me–she can’t cook at all so I always have to do all the baking! She and I look pretty alike too, or at least other people always think we’re twins, even though I’m three years older!

    You do look alike. You both are beautiful. I have two brothers (one younger, one older). We look alike based on our faces, but that’s it! I have extremely blond hair, one bro has black hair, and my younger bro has brown hair. I have blue eyes, bro has green and littlebro has brown. Also, I am fairly light skin, and my brothers have dark and extremely dark skin. In h.s. Our biology teacher used us as examples of dna and how sometimes you can never know what will happen.

    LOVE it! I even messed up and only used one can of garbanzo beans. I didn’t make the icing. Husband and 8 year old loved it, too. Ten year old wasn’t so into it. I’ll see tomorrow when it’s really cooled off–she might go for it then. I could definitely cut the sugar, but wanted to make it as written first (minus that can of beans–drats!) Thank you–so good!

        I used only one can, but didn’t add more flour. Turned out really good! Not sure what consistency it should be, but mine was a little gummy. Still good, even 2 days later.

    This looks incredible! I’ve been on a serious cinnamon kick as of late. Perhaps it has a little something to do with the season… 😉
    With your upcoming recipes, have you considered using any of the Silk holiday flavors in your recipes? I’ve been using the Silk chocolate mint in my oatmeal in the mornings, oh, almost everyday recently! I’d love to see how they worked in a baked recipe!

      I usually try to stay away from using specific products when I make a recipe because I worry that people won’t be able to find the particular product necessary to make the recipe…
      But someone just told me she made Silk Nog ice cream, and I might have to try that with their mint-chocolate one!

    SO just made this. could not refrain from licking everything that touched the batter (at least it’s okay to!) I used a blender so it didn’t come out as smooth as I wanted it, but it totally could have if I had more patience. Cooked up well and tastes delicious! and this is coming from someone who does not skimp out on indulging with desserts. It reminds me a lot of red bean desserts which are great!
