Since creating recipes is my full-time job, I try at least two new recipe experiments every day, and this was one of the successes of last week.
Today, I’m working on chocolate chunk cookies, molten chocolate pudding cake, and chocolate raspberry truffle ice cream.
So basically, it’s going to be one big chocolate fest.
But that’s no different from any other day!

I’m also working on some non-chocolate recipes, and of course I have to cook actual meals as well…
I’ve gotten really good at multitasking in the kitchen; it’s not hard to make a bunch of things at once if you’ve already made a mess.

German Chocolate Fudge Bites
(Makes 10-14 balls)
Inspired by my Hot Fudge Brownie Larabars
- 3/4 cup pitted dates (120g)
- 1/2 tsp pure vanilla extract
- 1/16 tsp salt
- 2 tbsp cocoa or cacao powder
- 2 tbsp shredded coconut
- 1/3 to 1/2 cup raw pecans
- optional: feel free to add some chocolate chips
Blend all ingredients together very well. I recommend using a food processor for best results, as they’ll be very sticky in a blender. Squish the dough together – I transferred the dough to a plastic bag then smushed it together in the bag. It’s much less messy this way! Roll into balls, cookie-cuttered shapes, or bars… or you can even use it for a pie crust!

I made these yesterday and loved them! I had to soak my dates for 20 min or so because they were hard and I think next time I would add another tablespoon of cacao powder for extra chocolate-y taste. Thanks for an awesome recipe! I was blown away by the fact that every ingredient was healthy! Have you ever made these bites with any other type of nut with success?
I haven’t, but I know a lot of the commenters said they used other nuts successfully :).

Today I made them with a no-name brand of dates… I ended up having to add some almond milk in order to get the moisture to form the balls, and for some reason I could really taste the cocoa powder (as opposed to the chocolate-fudgy taste)… so I will second your endorsement for quality [moist] dates!
I made these for Mother’s Day and they were so very good. My mom really liked them. Then I added 2T chia seeds. Massive fail. Do not add chia seeds to this perfectly fine recipe. Its like having gritty sand in your food. 🙁
I’ve made these twice and I love them!! I made them super dark/bittersweet, so I was surprised when everyone else loved them, too 🙂
the only problem was that I have trouble getting them to stay in ball form – I don’t know what it is but they were almost TOO moist (oil from the walnuts? moisture from the dates?). Solved the problem by rolling them in more shredded coconut, but I was wondering if anyone else ran into a similar problem??
oh my christ, those are delicious! I accidentally made them with pecans instead of walnuts but they still tasted good to me! First time having ‘dates’ actually…can you believe it? Never really heard of them before I started following your blog. I wish the last ‘date’ I went on was as good as these fudge bites!
Didn’t even think I’d like coconut, either. I also skipped the chocolate chips b/c I made the cookie pie last night and had a wee-bit too much chocolate last night/today 🙂

Just made these today, and they are DIVINE!!!!!! My brain doesnt believe they are healthy, which is fine by me. I double the batch, and then made an additional batch for my mother. Just need to find a way to not each the entire batch by myself. Wait, they’re healthy right, so it shouldnt matter….. 🙂

I made these to take to my dad who eats much too much sugar and fat. My husband and I just taste testing them, and we give them four thumbs up!! They taste like trouble, i.e. delicious and decadent without being full of all the wrong things. Now I must make the peanut ones!
